      • Observation (CORRECTED DURING INSPECTION): Dishwasher rinse gauge reading 169 degrees F with 'errors'. After rinse cycle, display reads error, low rinse temperature detected - servicing required. Hottest temperature reached at the plate level was 69 degrees C.
      • Corrective Action(s): In the interim, all dishes and utensils are to be manually warewashed. Wash, rinse, then sanitize in 100ppm bleach for 2 minutes then air dry.
