      • Observation (CORRECTED DURING INSPECTION):
      • - Quats sanitizer concentration in spray bottles used in the front service area, dining area, and back food preparation areas ~100ppm.
      • - Chemical dispensing station dispensing quats at ~100-150ppm.
      • Corrective Action(s): Ensure during operation a 100ppm chlorine or 200ppm quats sanitizer solution is available for sanitizing food contact surfaces. Until the chemical dispensing station is serviced premise to use 100ppm bleach by diluting 1 oz of regular unscented bleach to 1 gallon of water.

      • - Do not store utensils in sanitizer solution when not in use. Utensils requires adequate drying time before use. Consider using an ice bath, change on a regular basis.

      • Corrective Action(s): 1. Do not store scoop in the ice. Store scoops in separate container away from contamination.

      • Scoops must be stored in a separate container.
      • Please make sure all food is stored above the floor and protected from contamination (corrected during inspection).
