- Observation:
- 1) FRP wall panel, behind the potato cutter, is cracked and has a hole in it exposed the unsealed wall beneath it. The panel is no longer sealed, durable or cleanable. This will attract pests.
- 2) Raw wood panel is securing the potato cutter to the wall. The raw wood will absorb food and liquids and is not cleanable. This will attract pests.
- 3) The 3-comp dishwasing sink basins are missing drain plugs. Staff are unable to wash, rinse and sanitize dishes corrected and thoroughly, as sinks can't be filled up to fully submerge dishes in.
- Corrective Action(s):
- 1) Replace the whole FRP wall panel with a new one, ensure it is securely attached to the wall and the edges sealed to prevent water, food and pests from getting behind the panel.

- Observation: 1) Debris found on the floor under the coffee station island, the drink & Freal shakes station, and under the upright cooler and freezers in the chicken kitchen. This will attract pests.
- 2) Handles and doors of all upright coolers and freezers in the chicken kitchen have accumulated food and grease on them. This will attract pests.
- Corrective Action(s): 1) Immediately complete a thorough cleaning of the floor beneath the mentioned areas to remove all debris. Increase the frequency with which this is done each week. Have staff look under the equipment as they sweep and mop to ensure they are removing all debris from these areas.

- Observation: Observed old mice droppings on the floor and lower shelves of the back storage area. Rodent droppings carry diseases.
- Corrective Action(s): Immediately clean up the droppings. Wash and sanitize all surfaces that came into contact with the droppings. Remove all items off lower shelves, clean the shelves and place the items back on the shelves.

- Corrective Action(s): 1) Remove items off the floor and move equipment away from walls. Sweep and mop under shelving units and equipment to remove the food debris. Increase the frequency this is being done.
- 2) Wash the walls with hot water and soap/degreaser to remove the food stains. Rinse with clean hot water and sanitize. Increase the frequency this is being done.

- Observation (CORRECTED DURING INSPECTION): The wall mounted a/c unit in the kitchen has constantly dripping water from it. The water could fall onto food and/or it is a water source for pests to drink. A bucket was catching the water at time of the inspection. Manager indicated that a work order has been placed to repair it.
- Corrective Action(s): Call a company to repair or replace the a/c unit, so it no longer constantly drips water, and operates as per manufacturer's specification.
