- Observation (CORRECTED DURING INSPECTION): Rice is being cooked and cooled and then transfered to a warmer. Rice had been in warmer for a couple of hours and was only 53 degrees C.
- Corrective Action(s): Rice must be reheated to 74 degrees C within 2 hours and then can be hot held at 60 degrees C. Change practices immediately. Do not overload rice warmer with rice. Ensure it is reheated prior to placing in warmer.
