- Observation (CORRECTED DURING INSPECTION): A 12 quart Cambro container of onion soup was observed in the walk-in cooler. Internal temperature: 29C. Soup was cooked 3-4 hours ago. It was stated that onion soup was cooled in an ice bath prior to placing in the walk-in cooler.
- Corrective Action(s): Discarded. Ensure potentially hazardous food is cooled from 60C to 20C in two hours or less, then from 20C to 4C within the next four hours in order to limit the growth of potential pathogens, including spores and/or toxins that survive cooking temperatures.
- - Ensure food is cooled properly before placing into deep containers in the cooler, or place food into shallow containers in the cooler. Ensure food temperatures are verified with a sanitized, calibrated probe thermometer.

To allow foods to rapidly cool, large cuts of meat must be cut into smaller portions. Pork was discarded at the time of inspection.
