      • Observation (CORRECTED DURING INSPECTION): No surface sanitizer available at start of inspection. Staff stated bleach water spray bottle broke and a new one was purchased earlier today. Restaurant has been open for several hours with no surface sanitizer readily available.
      • Corrective Action(s): Staff prepared a 100-200ppm chlorine bleach water sanitizer in the new spray bottle and labeled it. Surfaces sanitized. Ensure a food contact surface sanitizer is always available during operational hours for direct/incidental food contact surfaces such as counters, tables, cutting boards, probe thermometers, etc, in order to kill any pathogens that may be present on surfaces. Bleach water sanitizer may be prepared in labeled spray bottle(s) and/or buckets.

      • Corrective Action(s): Employee was directed to discard gloves and wash hands. Ensure proper hand hygiene procedures are being followed to limit potential contamination of food/surfaces. Reviewed requirements at time of inspection.

      • Observation (CORRECTED DURING INSPECTION): Bleach water sanitizer in labeled spray bottle measured over 200 ppm chlorine.
      • Corrective Action(s): Sanitizer was diluted to 100 ppm chlorine. Ensure sanitizer is maintained at safe and effective concentrations for sanitizing food contact surfaces. High concentrations may potentially contaminate food.

      • Observation: Oil/dust observed on ventilation canopy filters. Oil and debris observed on floor in cooking area, and on shelves/counters/equipment in cooking area. Flour and other debris observed on counter in batter station, on cooler doors and handles, and on light switches.
      • Corrective Action(s): Staff began cleaning and sanitizing above-noted areas. Ensure all areas are cleaned and sanitized by today. Equipment/surfaces should be cleaned and sanitized according to a set frequency as per your sanitation plan, or more frequently, to limit accumulation of debris. Oil and debris may attract pest activity.
