- The right side of the front pizza prep cooler in front of the oven was kept at 10C. The staff was required to transfer all the high risk foods being stored at the bottom of the cooling cabinets and in the condiment containers on the top to the walk-in cooler. The above cooling unit must be closely monitored and no high risk foods should be stored in it until it can be maintained at 4C or below. Ensure that high risk foods be kept refrigerated at 4C or below at all times.
