    3 infractions

    • 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: Some potentially hazardous foods in the coolers on-site were measured between 5-10 degrees Celsius during the inspection. A couple sauce bottles labelled "refrigerate after opening" were also stored at room temperature. Public Health Significance - Refrigeration temperatures for perishable foods must be less than 4°C to prevent the growth of disease causing bacteria and toxin production.
      • Corrective Action: Monitor and log temperatures regularly, adjust and have repaired as necessary to provide a temperature of 4°C at all times. Discard any potentially hazardous foods that have been stored above 4°C for more than 2 hours. Ensure to follow storage requirements on product labels.
    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: A scoop was left in product for ongoing use in ingredient bins. Public Health Significance - Improper scoops and scoop storage exposes items to bare hand contact and potential contamination.
      • Corrective Action: Store scoops so that foods are not exposed to the handles or bare hand contact. Store food scoops in a sanitary manner and clean and sanitize them regularly.
    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Doors were left open during the inspection, and flies were observed in the food preparation area of the facility. Public Health Significance - pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
      • Corrective Action: Remove any pest attractants such as food and water, attempt to eliminate access to the building. Clean and sanitize areas or equipment where flies are land and monitor situation. Recommend using fly strips away from food contact surfaces.
