      • Observation (CORRECTED DURING INSPECTION): Soap bottle empty at front sushi prep hand sink.
      • Corrective Action(s): Liquid soap provided during inspection.

    • 212 - Operator has not provided acceptable written food handling procedures [s. 23]
      • Observation: Large volume of sushi rice prepared this morning by cooking and adding vinegar. pH tests not carried out so food safety plan to store >4 hours not acceptable.
      • Corrective Action(s): If pH is not verified, make only small volumes of sushi rice, use within 4 hours or discard and make new fresh batch. Submit updated food safety plan.

      • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: There appear to be some mouse droppings in storage room and on floor.
      • Corrective Action(s): Keep food in pest proof bins, clean, seal holes where pests may enter (some have been sealed), remove food and water sources, monitor for pests. Provide copy of your latest pest control report to Fraser Health.

      • Observation: Floor and shelves have accumulation of spilled food and/or dirt.
      • Corrective Action(s): Deep clean kitchen and follow a written cleaning schedule.

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Counter around front sushi prep sink is rotting and difficult to clean. Pipe under the warewashing sinks is leaking which could attract pests.
      • Corrective Action(s): Repair the area around the sushi prep hand sink and repair leak under sink as discussed. Correct - within 2 months.

      • Observation: Some droppings noted on floor behind freezers etc.
      • Corrective Action(s): Thoroughly clean premises, including floor in hard to reach areas, seals entrances, continue to monitor for pests. Keep licenced pest control report available on site for review.
      • Violation Score: 3
      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Cleaning still requires improvement.
      • Corrective Action(s): Clean walls under shelves and sinks and clean floor in hard to reach areas.

      • Observation: Some droppings noted in hot water tank closet, on floor near walls, etc. These may be older but are to be removed to help with monitoring for pests.
      • Corrective Action(s): Clean and monitor for pests. Provide details to Fraser Health.

      • Observation: Kitchen floor, fridge handles, wall behind double sink, filters above deep fryer, and washrooms require cleaning.
      • Corrective Action(s): Follow a written routine cleaning schedule. Deep clean floor, under equipment, shelves, walls, etc. Clean grease filters weekly or as needed. Clean floor, baseboards, etc. in washrooms.

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Wall beside dishwasher is peeling and an area of wall is covered with what appears to be mold. Tile is missing on wall near grill. There may be a water leak under dishwashing sinks. Paper towels are not in a dispenser at main kitchen hand sink.
      • Corrective Action(s): All surfaces to be smooth, impervious to moisture, and in good condition so that they can be kept clean. Re-surface wall by dishwasher that has become worn, replace missing tile,. and repair any water leaks. Provide a dispenser for the paper towels in main kitchen.

      • Observation: Observed some rodent droppings in the back storage area
      • Corrective Action(s): Please clean droppings as soon as possible - cleaning droppings quickly will help with monitoring and also will help deter further rodent entry

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: General cleaning requires improvment - equipment handles, counter surfaces, shelving etc requires more frequent cleaning
      • Corrective Action(s): Please implement a daily / weekly / monthly cleaning schedule for staff - having a schedule will help over the long term with upkeep of cleaning of the facility
