- Corrective Action(s): Clean the floor. Floor replacement or re-surfacing is being scheduled in some areas. Provide flooring that is non-slip, durable, impervious to moisture, and can be easily cleaned. Recommend covers or coving over the floor /wall junctions. Recommend sealing floor as well in the walk in cooler, dry storage and produce sections.

Temperature checks were not done today (temperature records not available). Hummus now stored in self serve display cooler along west side wall - food temperature about 42F.
- Corrective Action(s): All potentially hazardous foods are to be kept at 40F (4C) or colder. Keep daily temperature records and use accurate indicating thermometers that verify food temperatures. If cooler cannot keep PHFs at 40F or colder, move food to the walk in cooler and adjust, service, repair cooler. Provide update to Fraser Health.

Include how cooked meats will be cooled in order to meet quick cooling criteria and where they will be stored to protect from contamination (use only designated area for cooked foods). Recommend higher partitions for storage in the display cooler to protect from contamination. It was noted that labelling for ribs advise to reheat at home.
