  - Observation (CORRECTED DURING INSPECTION): No sanitizer is readily available for sanitizing food contact surfaces. This is a repeat violation.
  - Corrective Action(s): Please ensure that a sanitizer bucket or spray bottle is available at all times, and that staff are routinely spraying or wiping food contact surfaces with sanitizer.
  - Spray bottle was filled by manager, and contains 100ppm chlorine solution. Please ensure that there is enough bleach in the bottle for staff to fill sink / spray bottles as necessary.

  - Observation (CORRECTED DURING INSPECTION): There is no sanitizer on site. Many items that are washed manually in sinks are not being sanitized. Food contact surfaces and food equipment that is cleaned-in-place are not being sanitized.
  - Corrective Action(s): Operator provided chlorine during inspection. Now measured at 200ppm chlorine in the third sink. If not using dishwasher, all utensils and food equipment/contact surfaces are to be washed, rinsed, sanitized, and air dried. Provide test strips.

  - Corrective Action(s): Clean up water. Repair leak.

  - Observation (CORRECTED DURING INSPECTION): There is no sanitizing solution in the spray bottle used to sanitize food contact surfaces (0ppm chlorine detected and 0ppm quats detected). Manual sanitizing - 25ppm chlorine used.
  - Corrective Action(s): Chlorine sanitizer provided during inspection. 200ppm required in spray bottle (1/2 tsp domestic bleach in 500mL water) and make this sanitizing solution every day. For manual sanitizing - reviewed procedures and 100-200ppm chlorine now provided.
  - Violation Score: 15
  - 401 - Adequate handwashing stations not available for employees [s. 21(4)]
  - Observation (CORRECTED DURING INSPECTION): Hand washing station for back prep area has no hot water (faucet broken) and no paper towels. Hand sink by pizza dough prep station has hot/cold water and liquid soap but no paper towels. Staff washroom has no paper towels.
  - Corrective Action(s): Provided paper towels in a basket at the hand sink near dough prep during inspection and this station is to be used by all staff to wash hands when handling food. Do the same to provide paper towels at staff washroom.
  - Repair faucet at back area hand sink - see code 308.

  - Corrective Action(s): Repair hot water faucet at back area hand sink. Do this as soon as possible.

  - Observation: Detergent in two spray bottles is not labelled and is stored near oven. Sanitizer spray bottle is not labelled..
