- Observation: Potentially hazardouse foods (PHFs - ie higher risk foods such as meat, tofu, foods labelled "keep refrigerated") are being stored at 7.8C (46F) - measured food temperature using 2 thermometers. Your thermometer also shows a temperature above 4C (40F). Also, there are several food items that are past their best before dates and have been stored above the required refrigeration temperatures (processed potatoes in bulging plastic food packaging BB June 9, 2024; Black Forest ham deli meat BB June 5, 2024; Harvest weiners BB JN 13, 2024, etc.). Improper storage of higher risk foods (PHFs) could make people sick.
- Corrective Action(s): Immediately discard all higher risk PHFs that have been stored above 4C (40F) for more than 2 hours. Check all food for Best Before dates. You have the option to freeze foods stored at the required fridge temperature (4C/40F or colder) where appropriate AND IF you do this BEFORE the Best Before date.

- Observation (CORRECTED DURING INSPECTION): Spray bottle for sanitizer appears to be broken. Operator unable to obtain sanitizer from spray bottles (spray nozzles not working).
- Corrective Action(s): Use a sanitizer such as 100-200ppm chlorine to sanitize knives, cutting boards, sinks, and all food contact surfaces. Procedure as posted is Wash, Rinse, Sanitize, and Air Dry. Make fresh solution daily or more often. Instead of spray bottle, you have the option to keep sanitizer in a bucket. Wiping cloths to be stored in a sanitizing solution.

- Corrective Action(s): Repair the faucet so that it can provide hot/cold water to the second sink. Provide liquid soap and paper towels, in dispensers, at this sink so it will be used for hand washing. Repair as soon as possible and notify Fraser Health when repaired.

- Corrective Action(s): Adjust, clean or service the dairy /egg cooler so that it can keep potentially hazardous foods at 4 C /40F or colder. If it cannot, then store eggs, milk, and meat products in alternate cooler at 4 C or colder and check temperatures with accurate thermometer. Note also: Ready to eat sausage in reach in cooler - Watch "freeze by" dates.

Repair faucet at third sink so it can be used for hand washing. A barrier between the 2nd and 3rd sink is recommended due to concerns about protecting food in sinks from hand soap.
