      • Corrective Action(s): 1. Monitor unit to ensure unit can hold temperatures of 4°C or less. Start a temperature log to record temperatures at least three times daily (start, noon and end of day). There should be no condensation occuring on the glass.

      • Corrective Action(s): Ensure that the food items are stored at least 6" off the floor to prevent the risk of food contamination.

      • Observation: 1) Stand-up cooler does not seal properly resulting in inadequate circulation of cold air. The temperature was noted at 8C. No cold potentially hazardous food was stored in the cooler at the time of inspection.
      • 2) Chest freezer in front service area has thick ice build-up that has resulted in freezer to remain partially open.
      • Corrective Action(s): Ensure that all equipment/utensils/food contact surfaces are in good working order.
      • 1) Repair the cooler to ensure that it is able to maintain a temperature of at least 4C or less. Do not store any cold potentially hazardous food in the cooler until it has been reapired.
      • 2) Ensure that chest freezer is able to seal properly. Consider defrosting/removing thick ice build-up.

      • Observation: Previously contaminated bulk packaged items were being re-packaged into smaller retail packets with no labels for sale to the public. Package sealer and weighing scale were found hidden in a rack at the back of the store.
      • Corrective Action(s): DISCARD all contaminated food items. Do not re-package pest-contaminated food for sale to the public. Remove packaging equipment from the facility. You are not approved for re-packaging of any food products. Date to be corrected by: immediately

      • Observation: Food debris was noted on the floor of the back storage area. Dry food items were spilled due to damaged/contaminated packaging. The entire area is cluttered and difficult to monitor for pests.
      • Corrective Action(s): Clean up the back storage area to remove all food debris that is attracting pests into the facility. De-clutter and reorganize the back storage area to allow for monitoring of pests. Date to be corrected by: Oct 20, 2020
