      • Concentration of chlorine sanitizer was too potent, testing > 200 ppm. Correct concentration of chlorine sanitizer should be measured at 100 ppm. Excessively high concentrations of chlorine sanitizer can be harmful when ingested and irritate the skin.Operator was instructed on how to properly mix and accurately test chlorine sanitizer solution. Operator was informed to test the chlorine sanitizer mixture every time it is made. Operator diluted their solution with water to the correct concentration of 100 ppm.

      • - A waterproof thermometer was not available to measure the water temperature at the time of inspection.*Please ensure that a waterproof thermometer with a maximum temperature tab is available to record the temperature of the dishwasher before running any load. The minimum temperature required to sanitize dishes must reach at least 71°C.

      • Left over foods such as cooked rice and fish sticks were kept at room temperature. Internal temperature measured 46'C and 48'C respectively.The rice and fish sticks were moved to the fridge at the time of inspection. Keep leftover foods in the refrigerator at a temperature <4'C or in a hot hold unit > 60'C to prevent food from sitting in the temperature danger zone.
