      • Corrective Action(s): Clean and sanitize aformentioned equipment. Can opener blade and knives must be cleaned and sanitized after each use. If during busy hours, can place used equipment in dishwashing pit to be washed and sanitized at a later date. Do not store knives that have not been washed and sanitized in the knife holder.

      • If being used as a food contact sanitizer, ensure chlorine concentration of 100-200ppm.

      • Corrective Action(s): 1. Ensure processing raw eggs do not contaminate other ingredients. Use dedicated tongs for bean sprouts and ensure to wash your hands if they become contaminated to not contaminate different products. (CORRECTED AT THE TIME OF INSPECTION)
      • 2. Ensure rush hour food prepped is stored properly with proper lids and covers when placed in storage. Correction required today.

      • Observation: Observed a few knives in the knife holder was not maintained in sanitary condition. Can opener attached to a working table in the back had visible food and grease residue accumulation

      • Observation: Hot water tank failed in the morning of March 18th 2019 according to the operator. No hot water is being provided for hand washing, proper sanitizing, and cleaning at the time of inspection. Informed the operator that in order for a food premises to operate, hot and cold water is an imperative condition that operator must meet in any circumstances. Once operator found out, he proactively contacted a technician for repair/replacement.
      • Corrective Action(s): Operator must repair/replace hot water tank to provide hot water for proper hand washing, proper sanitizing of surfaces, dishes and utensils, and cleaning of the premises. Closure order issued until hot water tank can be fixed to a good working order.

      • Corrective Action(s): Contents of fridge were moved to the walk-in cooler at the time of inspection. Cooler is being replaced this week. Do not use this cooler for storing potentially hazardous foods in the mean time.
