- Observation (CORRECTED DURING INSPECTION): 1. No food-grade sanitizer was prepared although food preparation had begun.
- 2. Bread cutter, last used in June, contained leftover bread crumbs and grime inside.
- Corrective Action(s): 1. A bucket containing 200 ppm QUATS was prepared at time of inspection. This is a repeat issue from last year - please ensure that a sanitizing pail is prepared prior to any food production to ensure that food contact surfaces and work surfaces are cleaned and sanitized. This eliminates pathogens such as bacteria and viruses that could potentially cause foodborne illness.
- 2. Disassemble, clean, and sanitize the bread cutter by the end of day today. Ensure that all equipment and food contact surfaces are cleaned and sanitized after each use.

- Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray bottles were not at correct concentrations - one spray bottle near front of kitchen had ~ 50 ppm chlorine residual. Remaining 4 spray bottles clustered near dishpit area have >> 200 ppm chlorine residual.
- Corrective Action(s): Supervisor on-site re-prepared all sanitizer spray bottles at 200 ppm chlorine residual. Ensure that you regularly replace spray bottles with fresh sanitizer, and add the correct proportion of bleach to water (1 tsp per litre of water).
