      • Observation (CORRECTED DURING INSPECTION): Pizza on the tray cart noted to be covered with single use plastic cover. The cover was not long enough to cover the entire tray cart. Staff immediately voluntarily discarded the bottom trays (x2) of pizza, which was not covered by the plastic cover. Always ensure to cover the entire tray cart with the single use cover to protect pizza from contamination during transportation.

      • Observation (CORRECTED DURING INSPECTION): One pot of pesto mayo sauce was found cooling in the back prep cooler. Condensation was seen of the inside of the saran wrap covering it. It was measured at 7C internally. Operator stated it was made the day before, which was also written on the label on the saran wrap.
      • Corrective Action(s): Discarded the sauce as it had been temperature abused. Ensure foods are cooled in shallow containers from 60C to 20C in 2 hours and from 20C to 4C in 4 hours.
