      • Observation (CORRECTED DURING INSPECTION): - One spray bottle labeled sanitizer containing a clear liquid had no detectable sanitizer (quats and chlorine checked).
      • Corrective Action(s): - Contents discarded. Bottle was refilled with 200ppm quats. Ensure surfaces are re-sanitized as a precaution. Ensure sanitizer concentrations are being verified as per the sanitation plan.

      • Observation: - Mouse droppings observed on floor of kitchen dry storage room. Two bags of dry food product in the dry storage room had signs of contamination (chew marks and/or droppings on the exterior of the bag).
      • - One cockroach was observed in a monitoring trap at the Maple kitchenette.
      • Corrective Action(s): - Ensure all areas affected by pest activity are properly cleaned and disinfected today.
      • - Have premises reserviced by pest control, including identifying and sealing potential entry points and applying appropriate treatment(s).
      • - Going forward, ensure all dry food product is protected from potential contamination by pests. Use rigid, pest-resistant containers with fitted lids.
      • - Continue to ensure all prep surfaces / counters are being sanitized before use as a precaution.

      • Observation (CORRECTED DURING INSPECTION): An open box of cereal was observed in the Cypress unit kitchen. Note: Other cereal was stored in sealed pest-proof containers. A dead cockroach was observed in the Cypress unit kitchen where the cereal is stored.
      • Corrective Action(s): Box of cereal was discarded. Ensure all food is protected from potential contamination. Store food in pest proof containers due to pest activity observed. Cabinets / counters were cleaned and sanitized at the time of inspection.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Pot and pan washer was not meeting the required temperature of 71 degrees C or more at the utensil surface during the final rinse (pot and pan washer reached 69 degrees C then dropped down to 66 degrees C, and was tested at 62C to 64C on subsequent cycles). Pot and pan washer was on at the time of the site visit, and staff on site stated that it was used yesterday and would be used later today.
      • Corrective Action(s): Immediately discontinue use of the pot and pan washer as it is not reaching the required temperature at the utensil surface (71 degrees C or more) for sanitizing equipment / utensils. A sign was posted on the pot and pan washer during the inspection stating do not use.
      • Staff to sanitize all equipment and utensils that were washed through the pot and pan washer in the nearby conveyor dishwasher.

      • Observation: Pot and pan washer is not reaching the required temperature at the utensil surface of 71 degrees C or more.
      • Leak that was noted on previous report was not observed initially however valve was turned off. Leak was present when valve was turned on.
      • Corrective Action(s): Ensure pot and pan washer is in good working order and capable of reaching 71 degrees C or more at the utensil surface for sanitizing equipment and utensils. Ensure plumbing is not leaking. Date to be corrected by: October 1, 2025.

      • Observation (CORRECTED DURING INSPECTION): One sanitizer spray bottle was observed to be unlabeled. This is a repeat violation.
      • Corrective Action(s): Spray bottle was labeled during the inspection. Ensure all chemicals are properly labeled to identify their contents to help prevent accidental misuse / mixing.

      • Observation: Some cockroach activity observed in few traps. These were shown to the supervisor at the time of inspection.
      • Note: Premises is being serviced by a pest control technician and treatment / control measures are in place.
      • Corrective Action(s): Have pest control reset traps and continue with treatment / control measures, and monitor for new activity.
      • Hard to reach areas, including under equipment such as microwaves, are to be cleaned and sanitized to remove food debris as this may attract pest activity. A small amount of food debris was observed in hard to reach areas at the time of inspection. Management unable to locate most recent pest control service report at the time of inspection, but stated premises was serviced last week. Please email a copy of this report to the undersigned Environmental Health Officer.

      • Observation: - Pot and pan washer reached only 62 to 64 degrees Celsius at the utensil surface during the final rinse at the time of inspection. A temperature of 71 degrees Celsius or more is required for sanitizing. Note: Most recent check in sanitation log (yesterday) indicated pot and pan washer was meeting requirements. Log was not yet completed for today.
      • - Leaking water observed from pipes located between the dishwasher and chemical dispenser. Water is leaking onto the lower shelf of the table and onto the floor.
      • Corrective Action(s): - Ensure pot and pan washer is serviced so that it is in good working order and capable of meeting sanitizing requirements of 71 degrees Celisius or more at the utensil surface. In the meantime, staff to use the kitchen dishwasher to wash and sanitize all equipment and utensils on site. Any equipment/utensils that are too large are to be sanitized in place. Date to be corrected by: September 5, 2025.

      • Corrective Action(s): Service or replace Quats sanitizer dispenser to ensure it can consistently dispense 200ppm Quats sanitizer in order to sanitize food contact surfaces.

      • Corrective Action(s): 1) Ensure slicer is properly cleaned and sanitized after each use. Equipment may require additional presoaking to remove built-on debris. Slicer was soaked for cleaning and sanitizing at the time of inspection.
      • 2) Quats sanitizing solution must be maintained at 200ppm to proper sanitize food contact surfaces. Sanitizer bottle was emptied and refilled at the time of inspection.

      • Observation (CORRECTED DURING INSPECTION): Quats sanitizer solutions in Cedar and Pine room were at 50ppm.
      • Corrective Action(s): Quats sanitizer must be at 200ppm to properly sanitize food contact surfaces. Ensure staff are filling spray bottles with new solutions on a regular basis. Sanitizer spray bottles were refilled with 200ppm Quats sanitizer solution at the time of inspection.

      • Observation: Rodent droppings were observed in the Cypress serving kitchen and in he main kitchen (behind dry ingredient containers and in the dry storage area).
      • Corrective Action(s): Clean and sanitize areas affected with rodent droppings and continue to monitor for pests. Facility is currently serviced twice a month by a professional pest control operator. To avoid pest infestation, ensure the following area carried out: fill holes and potential entry points with steel wool, keep kitchen in a sanitary condition, keep all foods off the floor, stored in pest proof containers, and covered, remove garbage from the facility on a regular basis, and keep doors closed except during deliveries.

      • Observation (CORRECTED DURING INSPECTION): Two deficiences were noted with respect to washing and sanitizing:
      • (1) Can opener mounted on table had debris and grease on the mount and within the gears.
      • (2) Spruce servery had a quats-labelled spray bottle with 0 ppm quats residual.
      • The following corrective actions were made:
      • (1) Can opener was washed and sanitized and the mount was cleaned-in-place.
      • (2) The quats bottle was emptied and refilled with quats solution from the dispenser. It had 200 ppm residual. Proper sanitizing kills bacteria that could cause foodborne illness.
