    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) A probe thermometer to monitor temperatures of food was not provided in Atlantic/Churchill servery. Obtain a probe thermometer for monitoring food temperature. **Observation from March 9,2026** 1) A tray of food with chicken burger and salad was stored at room temperature. The burger's internal temperature was measured at 22.4 degrees C. The food was discarded. -Please ensure that the left over food is maintained at either 4 degrees or below or at 60 degrees or above.**Not observed during the March 9,2026 inspection**2) Staff were placing inserts of hot foods into steam table in Highlander/Lancaster House servery before steam table was able to properly heat up to at least 60C.

      • Bar in auditorium: Some mouse droppings were seen on the floor beside the dishwasher and on the floor in the liquor storage room.-Please clean up all droppings and consult with the pest control company to eradicate the mice.**Sept 12, 2025: mouse droppings noted under bar hand sink and in pub storage room behind AV sound unit and along wall. The cardboard monitoring station (mainly used for insects) was chewed up by mice. Please clean/sanitize areas contaminated by mice and implement appropriate control measures for mice.**March 9,2026** Mouse droppings were observed under the bar area and by the dishwasher in the bar.

      • Cafeteria:1) Mouse droppings noted in the cupboard under the hand sink. Please clean/sanitize areas contaminated by droppings and implement appropriate pest control measures. Seal off all points of pest entry. Please provide pest control records for site.Gift Shop:1) Mouse droppings were noted in the back storage room. Please clean/sanitize and implement pest control measures.**Update from March 9,2026**No droppings were observed during the March 9 inspection in the aforementioned areas.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. There are areas where the floor is in disrepair with soft spots in the Dieppe, Flanders, Lancaster, and Highlander serving kitchens. These areas are all taped to identify the areas of disrepair. -Ensure these are repaired. 2. The cupboards in the serveries located in Techumseh, Lancaster and Highlander are in disrepair and have raw wood exposed. One cupboard door was falling off in the Tecumseh serving kitchen.-Please repair. 3. Arborite was lifting on the counter in the Atlantic serving kitchen, and the counters were in disrepair under the ice machines in the Highlander serving kitchen and the auditorium bar.-Please repair.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) A probe thermometer to monitor temperatures of food was not provided in Atlantic/Churchill servery. Recommend obtaining a waterproof min/max probe thermometer that can also be used to monitor dishwasher sanitizing temperatures.2) All serveries: leftover creamers that were stored at room temp were placed back into cooler after breakfast, brought out for lunch and stored at room temp again, then put back into cooler after meal service if unused. Discard unused/temp abused creamers after meal service or store at or below 4C at all times.3) Hard boiled eggs from breakfast were left at room temp until lunch service in the Highlander House/Lancaster House servery. Temp measured 25C (destroyed). Place leftovers into the refrigerator or maintain hot food at or above 60C.4) Staff were placing inserts of hot foods into steam table in Highlander/Lancaster House servery before steam table was able to properly heat up to at least 60C.5) Perishable foods were either stored at room temp or not properly temp controlled in Strathcona/Tecumseh servery. Seafood salad measured 7C, ground beef measured 45C (both destroyed). Use ice to keep cold foods at or below 4C, and place inserts directly into steam table for at least 60C hot holding.6) Dieppe/Dover servery: plated taco salad was left out at room temp and measured 23-25C after lunch service (destroyed). Store in cooler at or below 4C.7) Flander/Gibralter servery: bowl of lettuce, tomatoes (from taco lunch) was stored in cupboard @ 23-24C, several bowls of fruit salad @ 17C and soup @ 27-30C were left on counter, all after lunch service. Place leftovers in cooler at 4C or lower - do not leave food at room temp for residents who don't make it on time for lunch (destroyed).
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • There were no means to monitor the sanitizing temps of the dishwashers in serveries Atlantic/Churchill, Highlander/Lancaster, Strathcona/Tecumseh, Dieppe/Dover, and Flander/Gibralter. Recommend obtaining waterproof min/max probe thermometer that can also be used to monitor food temps.

      • Dishwasher in Flander/Gilbralter servery was not operational. Staff were taking all dishware/utensils to kitchen to wash. Please repair dishwasher.

      • Cafeteria:1) Debris noted in cupboard under the self-serve ice and water dispensers. Please clean.Dieppe/Dover servery:1) Debris and unknown green substance was noted under the steam table. Please clean.2) Food spillage/debris noted in cupboards. Please clean.

Main kitchen: The floor covering was cracking along the bottom of the wall in the cart washing room.-Please repair in order to prevent water damage.
