Obtain a probe thermometer for monitoring food temperature. **Observation from March 9,2026** 1) A tray of food with chicken burger and salad was stored at room temperature. The burger's internal temperature was measured at 22.4 degrees C. The food was discarded. -Please ensure that the left over food is maintained at either 4 degrees or below or at 60 degrees or above.**Not observed during the March 9,2026 inspection**2) Staff were placing inserts of hot foods into steam table in Highlander/Lancaster House servery before steam table was able to properly heat up to at least 60C.

- 1) A probe thermometer to monitor temperatures of food was not provided in Atlantic/Churchill servery. Recommend obtaining a waterproof min/max probe thermometer that can also be used to monitor dishwasher sanitizing temperatures.2) All serveries: leftover creamers that were stored at room temp were placed back into cooler after breakfast, brought out for lunch and stored at room temp again, then put back into cooler after meal service if unused. Discard unused/temp abused creamers after meal service or store at or below 4C at all times.3) Hard boiled eggs from breakfast were left at room temp until lunch service in the Highlander House/Lancaster House servery. Temp measured 25C (destroyed). Place leftovers into the refrigerator or maintain hot food at or above 60C.4) Staff were placing inserts of hot foods into steam table in Highlander/Lancaster House servery before steam table was able to properly heat up to at least 60C.5) Perishable foods were either stored at room temp or not properly temp controlled in Strathcona/Tecumseh servery. Seafood salad measured 7C, ground beef measured 45C (both destroyed). Use ice to keep cold foods at or below 4C, and place inserts directly into steam table for at least 60C hot holding.6) Dieppe/Dover servery: plated taco salad was left out at room temp and measured 23-25C after lunch service (destroyed). Store in cooler at or below 4C.7) Flander/Gibralter servery: bowl of lettuce, tomatoes (from taco lunch) was stored in cupboard @ 23-24C, several bowls of fruit salad @ 17C and soup @ 27-30C were left on counter, all after lunch service. Place leftovers in cooler at 4C or lower - do not leave food at room temp for residents who don't make it on time for lunch (destroyed).
