- Observation (CORRECTED DURING INSPECTION): Ambient temperature at main line cooler in main grill/line area was at 14C, internal temperature of food was 13C. All potentially hazardous foods must be kept at 4C (40F) at all times. Temperature logs maintained intermittently and recorded temperatures for this unit were above 4C.

- The ice scoop/bucket was being inside the ice making machine in the ice. The ice could become contaminated when staff grab the scoop/bucket and touch the ice with their hand.
- Corrective Action(s):
- Immediately remove the scoop/bucket inside the ice machine and store it in a clean area, outside of the ice machine. Retrain staff so they store the scoop/bucket in the apppropriate area. During the inspection, this was corrected.

- There are a number of chest freezers and coolers that have broken seals/gaskets and/or broken doors/lids being held together with duct tape. Duct tape is not food grade nor is it cleanable. The broken doors/lids are not cleanable and pieces of plastic could fall into food. Broken seals/gaskets are not cleanable and allow cold air to escape.
- The broken seals/gaskets and doors/lids of freezers and coolers have been mention in previous inspection reports. These violations have NOT been addressed yet.

- 3) The cook line cooler had broken gaskets/seals. The cooler is unable to keep the coolers doors tightly closed.

- 1) Immediately call a repair company to increase the [Cl2] to 50-100ppm. Until the glasswasher is fixed, use the low temperature dishwasher to wash glasses. At time of the inspection, the glasswasher was fixed and the [Cl2] was 50ppm.

- Observation:
- There are drain/fruit flies found in the premises, mainly in the bar and dishwashing area. Pooling water and food debris will attract and allow these flies to breed. Found a pan full of dirty water soaking utensils over night in the dishwashing area. Ice in sinks, in the bar area, are allowed to melt slowly throughout the night, this creates a wet environment for the flies.

- To help eliminate the fly problem, there shall not be any pooling water or food debris left over night. Discard all containers/buckets/bins of water at the end of the night. Wash all surfaces with hot water and soap each night. All dirty dishes, cutlery and cups shall be washed at the end of the night, it shall NOT be left over night and washed the next morning. Soap removes grease and food, sanitizer doesn't. Sanitizer only kills germs that hide under grease and food.
