      • Observation: High-temperature dishwasher took 6 runs to come up to sanitizing temperature (equal to or greater than 71C). Sanitizer cycle dial on machine (manifold) displays inaccurate temperature. Staff have no other means to determine sanitizing temperature of the machine.
      • Corrective Action(s): Obtain a waterproof thermometer that can record maximum temperature reached. Place thermometer in dishwasher with each use and ensure that equal to or greater than 71C is reached each time, as required for sanitizing
