      • Observation (CORRECTED DURING INSPECTION): Ice wand in the walk-in freezer stored on the floor, not protected from contamination. Ice wand is an utensil used cool down foods and comes in direct contact with hot foods.
      • Corrective Action(s): Required operator clean and sanitize the ice want prior to using it; ensure to store it in or on a clean surface, protected from contamination. Operator removed the wand from the floor and cleaned it at the time of inspection

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): 1. 1 sanitizer spray bottle was noted with 100 PPM QUAT. 1 sanitizer container was noted with no QUAT.
      • 2. Cleaned dishwares after being washed in the dish machine was not being properly air-dried prior to stacking away.
      • Corrective Action(s): **Issues corrected at the time of inspection**
      • 1. Sanitizer spray bottle and container were refilled during the inspection. Please change out the sanitizer often to ensure adquate concentration is present, as indicated by the manufacturer's label.
      • 2. Spoke to chef regarding dishwares noted not being properly air-dried before stacking away. Chef will speak to the dishwasher personnel to ensure dishes are properly dried before storing.

      • 402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
      • Observation (CORRECTED DURING INSPECTION): Observed dishwasher personnel not washing hands in between putting dirty dishwares into the rack for washing and putting the cleaned dishwares away on the shelves.
      • Corrective Action(s): **Issue corrected at the time of inspection** Chef will speak to the dishwasher personnel to ensure proper handwashing or sanitizing is performed in between touching dirty and clean dishes to avoid recontamining the cleaned dishes.

    • 311 - Premises not maintained as per approved plans [s. 6(1)(b)]
      • Observation: Noted a handwash station at the back of house area, by the Coca Cola cooler, that was turned off - no water coming out when faucets are turned on. As per Chef, there was a prep station by this handwash station but this prep station was removed and instead an upright freezer was installed. Now there is no food prep in this area and the handwash station is no longer needed and so the water has been shut off to this station. This change in floor plan was not communicated and approved by Fraser Health prior to change.
      • Corrective Action(s): Submit an updated floor plan that addresses the removal of the prep station and addition of the freezer. Going forward, any change to the existing floor plan, including the addition or removal of equipment, must be communicated to Fraser Health for approval prior to change.

      • Observation (CORRECTED DURING INSPECTION): Observed accumulation of dried food debris in a slicer's sharpening guard. Operator directed a staff to initiate cleaning process. Ensure clean-in-place equipment are fully disassembled before cleaning.

      • Observation: Observed water dripping from a drop ceiling. Operator explained the leaking is from pipe condensation. Work order is already in place. Food contact surfaces are relocated away from the dripping water.
