Staff stated that ladels were washed then stored in the bucket and water pooling at the bottom of bucket is dripping from wet ladels. This could result in potential contamination of clean utensils. Staff moved all the ladels to the dishwashing area.

This could result in inadequate cleaning and sanitation of the food contact surfaces.
- Proper way to conduct manual dishwashing was discussed i.e. scrape, wash with dishwashing detergent, rinse with clean water, sanitize with approved food grade sanitizer and air dry. Staff prepared 200ppm of bleach solution in 3rd sink.

- 2. In the walk in cooler, 2 cardboard boxes were stored directly on top of pan with dough in it. The dough was uncovered and in direct contact of cardboard. Staff discarded dough at the time of inspection due to potential risk of contamination.
- 3. In the undercounter freezer, some food products were exposed and in contact with frozen ice pooled at the bottom shelf. Food products were discarded by staff during inspection and includes 1x chicken thigh, 1x patty and 2x dumpling.

- Observation (CORRECTED DURING INSPECTION): The 2-door reach-in cooler in the back of the facility was noted with an ambient air temperature of 8.0C. The top cold rail was holding food between 8.5C - 13.9C. The internal temperatures of all the food held within this cooler were also taken (picture evidence collected during the process). As per staff, all the food in this cooler were cooked the previous night or before and temperature of this cooler unit was not taken this morning. It was noted the cooler unit was overstocked and filled with stainless steel containers of food items.
- Corrective Action(s): As per operator, the cooler was functioning and holding food at 4.0C or below yesterday. They knew there was an issue with the cooler and has already called a technician to fix the cooler. Reviewed what items held in this cooler was potentially hazardous. Any cold potentially hazardous food items that were over 4.0C were discarded by the staff and operator - this includes butter chicken, chicken curry, chickpea, paneer, chicken, goat (picture evidence collected for all food discarded).
