Specifically, the facility failed to log the time each product was removed from the oven on a record-keeping sheet, and the time for each product to be discarded was not displayed on a tag placed on the back of the appropriate wire rack in the cabinets for staff to see. It was noted that the facility is recording the time the baked product was removed from the oven on the display tag placed on the back of the appropriate wire rack in the cabinets.The manger promptly recorded the time the baked products were remove from the oven in the record book and the time the food products are to be discarded on the display tag placed on the back of the appropriate wire rack in the cabinets
