      • A splash guard is installed to the left side of the production handwashing sink, where the right side is directly connected to a food prep table. - Ensure a splash guard is provided to the right for sufficient distance between the sink and food prep.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The cooler across from the 3 comp sink was measured at 7C.- Ensure the cooler is able to maintain 4C and lower.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No quat test strips available. - Ensure test strips are available, and to confirm concentration daily.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • An electric hand dryer was installed in the production area. - Ensure the electric hand dryer is removed from the production area. The paper towel dispenser was empty. - Ensure paper towel is provided in a dispenser.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The quat sanitizer dispensed was not 200ppm, but between 600-800ppm.- Ensure the dispenser is calibrated properly to dispense 200ppm sani.

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • 1) The soap dispenser at the handwash sink was empty.-ensure all handwash sinks are stocked with soap and paper towel in suitable dispensers. This is the only handwash sink for bakers and serving staff, so it's vital for the safe operation of the food establishment. 2) The paper towel in the washroom was empty.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Some flies were noted throughout the food handling areas.--keep the premises clean and dry to help decrease and alleviate flies.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) The handles of coolers/fridges were dirty with food/grease/debris.-ensure the handles and all frequently touched surfaces are cleaned and sanitized.2) There was accumulation of debris/dirt under/beside the ovens.-ensure all equipment is moved to thoroughly clean the premises.
