- **A couple of the shelves in the kitchen are not designed for food storage in kitchen environments. They have many difficult to access crevaces or grooves that make routine cleaning difficult. Cardboard is not the answer or substitute to cleaning and should be removed.

- Observation: High temperature dishwasher final rinse temperature registered 62 C, 63 C and 63 C at the plate surface during three consecutive runs. The final rinse tempeature is not high enough to sanitize dishes.
- Corrective Action(s): Repair or adjust the dishwasher so that it reaches at least 71 C at plate surface or 82 C at the manifold during final rinse cycle.
- In the mean time, all dishes and utensils washed through the dishwasher must be manualy sanitized by soaking in 200 ppm chlorine sanitizer ( 1 oz bleach per gallon of water) ( Immediately). You must confirm by calling when the dishwasher has been repaired. A max-minimum registering thermometer or thermo labels must be used to test final rinse temperature at the plate surface.

- Observation (CORRECTED DURING INSPECTION): Noticed raw chicken touching the white sandwich preparation while an employee was cutting it. Noticed raw chicken portions stored above sliced hams in the deep freezer,
- Corrective Action(s): 1. Ensure raw chicken and meats etc are cut on a separate table using red cutting board. Ensure to wash and sanitize the cutting board and knife after each use. Clean and sanitize the table used for cutting raw meat. The sandwich prep cutting board was washed and sanitized in the double sink at the time of inspection. Recommended cutting the white board in small sections to allow for easy cleaning in the double sink.
