      • Observation (CORRECTED DURING INSPECTION): Cut vegetables are being placed ontop of a stool close to the dishwashing area where employees are washing dirty dishes. Operator indicates that vegetables are going to be used in stir fry (cook step).
      • Corrective Action(s): Move cut vegetables away from the area in their own dedicated table or in covered in the cooler. Reorganize the preparation tables to ensure that food items are separated from dirty items such as dirty dishes. Operator moved the cut vegetables. Recommend to obtain more preparation tables for food preparation.

      • Large amounts of unused items and personal items being stored inside a broken cooler not used for the operation. There is alot of clutter and the broken cooler is taking away space for operational needs.
      • Corrective Action(s): Remove the broken cooler, unused equipment/items, and personal items from the kitchen. Replace the space with additional preparation table and preparation cooler to provide more food preparation area and coolers for storage which will significantly reduce the clutter and disorganization.

      • Corrective Action(s): Ensure all spray bottles are replaced daily with sanitizer solution and tested each time they are dispensed. Operator replaced sanitizer solution at the dispenser tested at >200ppm

      • Observation (CORRECTED DURING INSPECTION): Raw chicken and shrimp thawing in bucket of water in the 2 compartment sink. Operator indicated that they were taken out to thaw less than 30 min ago. Water temperature tested at 6C. Ensure raw meat are thawed using proper thawing technique, either thawing in the refrigeration unit or with continuous running cold water or in the microwave. Operator turned on running cold water for thawing.

      • Observation: Build up of food debris and grease in the following areas:
      • 1. Inbetween, behind and along the stand up coolers and prep cooler
      • 2. Mold build up inside the edges of the door ledge and strips of the stand up and prep coolers.
      • 3. Grease build up underneath and behind the stove unit and deep fryer.
      • 4. Clean inside all the microwaves and small oven.
      • Corrective Action(s): Clean and sanitize the listed areas.

      • Observation: Some clean up has occured in easy access areas and behind/under a selection of equipment. The floor below and behind the two upright cooler/freezer units still observed with old accumulations of food (dried up fruit/verges/grains). Back storage area mostly unchanged and disorganized. Coats, bags, trays, unused equipment etc. piling up in this area. Very difficult to clean and stay organized.
      • Corrective Action(s): Continue to move items in kitchen area to improve regular cleaning. Purchase proper shelving unit for backarea of premises to support more storage and organization as discussed. Make sure the unit can be easily cleaned, is durable and able to store large volume articles.
      • Check at next scheduled inspection for improvements.

      • Observation: Main areas and contact surfaces generally OK. Secondary food contact shelves, and the floor in hard to reach areas (i.e. behind and under coolers/freezers, behind cookline and ceiling at air intake/exhaust) observed with moderate volume of food debris. The area under and around the sinks also observed dirty.
      • Back area of kitchen very disorganized and difficult to keep clean.

      • Observation: Upright freezer not in good working order; door seals are damaged resulting in highe temperatures for frozen food. Freezer temperature ranged from -4 to -8 C,
      • Corrective Action(s): Repair or replace this upright freezer immediately. A deep freezer could be used in place of this upright freezer as long it is capable of mainitaining frozen foods at -18 C or below ( By January 25, 2020). Relocate all frozen meats the small deep freezer (immediately).

      • Observation: Hot Noodle soup ( Pho) @ 70 degrees C was being cooled in a big plastic bucket in the cooler.
      • Corrective Action(s): You must cool hot soups in the original cooking pots using ice water bath in the sinks. Once it is cooled to room temperature it must be transferred to the coolers. Ensure foods are cooled fro 60 to 20 C within 2 hours and then from 20 to 4 C within the next 4 hours. (immediately).

      • Observation: Build up of grease and food debris noticed in several areas of the kitchen. The food prep and storage areas are disorganized
      • Corrective Action(s): The following items/areas require thorough cleaning.
      • 1. Clean floors throughout the remove food debris especially underneath the behind equipment and coolers.
      • 2. Do not store any food items or equipment on the floor.
      • 3. Clean interior of all coolers as well as the exterior surfaces
      • 4. Clean the ceiling tiles especially around the vents.
