      • Observation (CORRECTED DURING INSPECTION): 3 of the refrigeration units (6 door dessert coolers and 2 low boy coolers below the front grill/ stove top areas) were noted with temperatures of over 4.0C. Food that was stored overnight in these units were noted with internal temperatures of over 4.0C (picture evidence collected):
      • 1. 4 cut cakes/ pies at 9.5C, 9.2C, 9.1C
      • 2. 15 kg liquid whole egg at 9.3C
      • 3. 2 containers of Hollindase sauce at 10.0C, 10.0C
      • 4. Approximately 2 cups of milk in a 4L jug
      • 5. A tub of margarine original
      • 6. Egg yolk at 26.3C
      • Corrective Action(s): The above mentioned food was discarded by staff during the inspection. Any food that was brought out from the walk-in cooler this morning (less than 2 hours ago) were placed into another functioning cooler.

      • Observation (CORRECTED DURING INSPECTION): Facility was using a non-food grade sanitizer (Peroxide Multi Surface Disinfectant and Cleaner) for sanitizing food contact surfaces, including prep tables.
      • Corrective Action(s): Staff has access to QUAT sanitizer and QUAT sanitizer was filled out instead (200 PPM QUAT residual measured) in a spray bottle to use as a food contact sanitizer.
      • Only use the Peroxide Multi Surface Disinfectant and Cleaner for non-food grade surfaces such as door handles and washrooms.

      • Observation (CORRECTED DURING INSPECTION): Facility uses high temp mechanical dishwasher to wash and sanitize dishes. Dishwasher was run multiple times but the temperature was read around 66C on plate level during rinse cycle. This could result in inadequate sanitizing of dishes. Technician came on site and temporarily converted the dishwasher to sanitize using bleach. 100ppm chlorine residual recorded during rinse cycle.
      • Corrective Action(s): Please ensure that all food contact surfaces, dishes, equipment are adequately washed and sanitized.

      • Observation (CORRECTED DURING INSPECTION): In the meat dept, the sanitizer spray bottle was recorded at 0ppm QUATS/bleach. Staff stated that the bottle is filled from dispenser and showed the dispensing unit of 'cleaner'. Inadequate cleaning and sanitizing of food contact surfaces could result in potential food contamination. Staff refilled the bottle from QUATS dispenser and 200ppm QUATS concentration recorded.

      • Observation (CORRECTED DURING INSPECTION): Frozen bucket of clam chowder and chilli were stored at room temperature. Staff stated that kitchen staff needs it today and they are keeping it there to thaw. Both food products were still frozen and staff moved them back to walk in cooler.
      • Corrective Action(s): Please follow one of the following practices to thaw food:
      • - Store in cooler overnight at or below 4C
      • - Under cold running water
      • - In the microwave (small portions)

Operator informed that it has been stored under room temperature for 2 hours during the lunch rush. Cakes stored in a display cooler at the front measured at an air ambient temperature of 6.8C. Operator informed that the cakes have been stored in the display cooler at the front for 2 hours.
      • Corrective Action(s): Place the raw cut fries in a cooling unit able to hold an air ambient temperature of 4C or lower. Store the cakes in a cooling unit able to hold an air ambient temperature of 4C or lower. Cakes that are stored above 4C for lunch rush must be discarded after 4 hours. All potentially hazardous foods (e.g.: cakes and raw cut fries) must be stored in a cooling unit able to hold an air ambient temperature of 4C or lower.

      • Observation (CORRECTED DURING INSPECTION): 1. A tray of margarine was stored at room temperature with internal food product of 22C. On the label it stated the product must be kept refrigerated. Operator stated the margarine was stored at room temperature for less than 2 hours.
      • 2. 2 bottles of liquid egg white, 2 trays of bacons were stored in the drawer cooler under the grill with an internal food product temperature of 8C. The ambient air temperature of the draw cooler measured at 9C.
      • Corrective Action(s): 1. The tray of margarine was transferer into the prep cooler. Do not store margarine at room temperature for more than 2 hours.
      • 2. 2 bottles of liquid egg white were discarded. 2 trays of bacons were moved into the prep cooler. Do not use the aforementioned draw cooler until it is able to maintain an ambient air temperature of 4C or less.

      • Observation: Cockroaches observed on the glue traps placed near the staff room and on the shelf near the grill. Operator was able to provide pest control reports from professional pest control operator.
      • Corrective Action(s): Contact and follow the instructions from professional pest control operator in order to control the cockroach issues. Clean up food debris from floor everyday and store food in tight-sealed containers. Replace the glue traps with cockroach activities and monitor the area. Correct by: today.
