- Observation (CORRECTED DURING INSPECTION): Cooked pearls were stored at room temperature. However, staff is aware that they must be discarded after a certain hours of it being cooked, however they do not know how long this time is.
- Corrective Action(s): Please re-educate all staff to ensure they know how to properly use time as a control for holding cooked pearls at room temperature. If this procedure cannot be followed as exactly described in your Food Safety Plan, then cooked pearls will either need to be held cold at 4.0C or above 60.0C instead.
- As per your Food Safety Plan, cooked pearls are to be held for 3 hours at room temperature then discarded. Staff labeled the cooked pearls during the inspection. It is expected that the time are labeled for all cooked pearls for 3 hours then discarded.

- Observation (CORRECTED DURING INSPECTION): Observed visibly contaminated ice in the ice machine (brown colored substance). Ice discarded at this time.

- Observation (CORRECTED DURING INSPECTION): 1. Inner wall of the ice machine had accumulation of mildew-like deposit. The manager discarded ice and initiated cleaning/sanitizing procedure.
- 2. Observed two stainless steel inserts stored up-right on the drying rack with a lid on. Observed water in both inserts. On site staff cited that they rinse them with hot water prior to use. This is not an acceptable way of washing, sanitizing and air drying food contact surfaces. Inserts were placed up side down to promote faster air drying.
