      • Observation (CORRECTED DURING INSPECTION): Water in sanitizing sink observed to be too hot. This was discarded and refilled at approx 75F. Temperature must be approx 75F in order to accurately measure the concentrstion of the Quat sanitizer.
      • Corrective Action(s): Ensure staff are following the written directions posted on the wall adjacent to the sanitizing sink.

      • Observation (CORRECTED DURING INSPECTION): Quat sanitizer concentration observed to be below 200ppm in both spray bottles. These were emptied and refilled at time of inspection and concentration tested at approx 300ppm.
      • Corrective Action(s): Ensure staff have been trained on how to use the Quat test strips to verify the concentration in the spray bottles.

      • Observation (CORRECTED DURING INSPECTION): Dishwasher observed to be dispensing 0ppm chlorine in final rinse. Once old sanitizer container was replaced with a new container and dishwasher primed, final rinse of approx 100ppm chlorine detected.
      • Corrective Action(s): Rewash/sanitize all utensils/tray inserts as discussed.

      • Observation: The vent hood has not been serviced since 2019.
      • Corrective Action(s): This may affect the indoor air quality. Service the vent hood as needed, and try to book the maintenance company ahead of time so that it gets done ahead of the deadline, in the future.

      • Corrective Action(s): This needs to be adjusted to dispense atleast 50 to 100 ppm chlorine during the final sanitizing cycle at the plate surface. Use the 3 compartment sink and perform manual warewashing until the dishwasher is fixed. DO NOT USE THE DISHWASHER.
