Observed a disparity in temperature heating of the heating elements from the metal plate upon which the chicken is stored in their containers between the bottom shelf and the 2 upper shelves.
      • Wire rack shelving unit adjacent to the 3 compartment sink observed with dust accumulation. In addition the lower shelf has collapsed onto the floor allowing debris to accumulate as the shelving unit cannot be moved.

      • Corrective Action(s): Contact technician to service the hot holding unit. All 3 shelving units are to be heating equally the same. As a precaution, chicken on the lower shelf was relocated to the middle shelf.
      • Repair or replace the wire rack shelving unit. If replaced recommend a mobile shelving unit so that it can be easily moved to access the floor for cleaning
      • Raise height of the lowest shelf on the shelving unit adjacent to the mop sink so that the floor is easily accessible for cleaning
