- Observation: Front open hot holding unit still not capable of hot holding product at >60c. Not enough heat is being radiated from the ceiling elements . Chef stated technician serviced the unit but could not find a fault.
- Corrective Action(s): Premises may update their food safety plan for the hot holding unit. A written procedure will need to be submitted showing how product will be monitored and discarded after no longer than 2 hours. A "Time in" monitoring log will need to be on site to show when product when need to be discarded by based on the time when it was placed in to the unit.
- Premises may also look into replacing the unit with one that is capable of hot holding product at >60c. This will eliminate the potential for food waste.
