      • A used cleaning cloth was observed to be sitting on the prep cooler cutting board across from the grill line when not in use. Ensure cleaning cloths are stored in sanitizer or discarded into the laundry when not in use. The operator placed the indicated cloth into the laundry during the inspection.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • A tray of dried crispy onions and a container of Tuile were observed to be drying near the window uncovered. Ensure food is kept covered when stored to help prevent pests from potentially contaminating food. The operator provided a cover for the indicated food items during the inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A tray of chopped kale with oil was observed to be drying near a window and was in the danger zone from 4 degrees Celsius to 60 degrees Celsius for more than two hours. Ensure all potentially hazardous food is kept out of the danger zone from 4 degrees Celsius to 60 degrees Celsius. The operator discarded the indicated chopped kale during the inspection.

      • A gap was observed surrounding the perimeter of the marble countertop. Ensure that the indicated gap is sealed to render the surface smooth and easy to clean.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Three wooden spoons were observed to be in disrepair and are no longer smooth and easy to clean. Ensure that the indicated utensils are discarded, replaced or refinished to be smooth and easy to clean.

      • Yes (corrected during inspection) - the Food Handling Permit is current (expiry date of October 31, 2025) but was not posted in a conspicuous location (note: it was moved during minor renovation work). However, at time of inspection, it was located and then posted for display on the side wall at the 3rd floor bar area, visible to the public.
