- The following food were left in a container on the countertop.:-cooked rice at 11.3*C-cooked gravy at 13.8*CThe operator stated that food was brought out within 2 hours. Food was moved into the cooler.-Ensure all cold perishable food are kept at temperature below or at 4*C

- The glass dishwasher tested 0ppm of Iodine. Operator was asked to use the 2-compartment sink for washing, rinsing and sanitizing-Ensure the Quat concentration is at 12.5ppm for adequate sanitizing of equipment

- 1. The Quats test strips available had expired. No chlorine test strips.-Ensure valid test strips are available for measuring the sanitizing agent concentration2. Regular testing of glass dishwasher was not done.-Ensure dishwashers are tested regularly

- Uncovered sauce and cooked chicken in walk-in cooler.Food must be protected from contamination. Inspector had operator cover sauce and chicken.

- The glass dishwasher at the bar did not have iodine. Inspector noted the jug of iodine was near empty, the operator replaced the jug. Iodine concentration of 12.5 ppm was then attained.
