      • Observation: Rodent droppings observed in the dry storage room with the upright freezers, inside the cardboard boxes with paper plates.
      • Cockroach observed in sticky traps in the kitchen.
      • Corrective Action(s): Remove droppings, discard paper plates that may have been in contact with droppings. Sanitize area.
      • Continue to monitor for pest activity and work with pest control company. Sanitize all food contact surfaces with 100ppm chlorine solution prior and after use (countertops, upright freezers, etc).

      • Observation: Upright glassdoor cooler registered 14 C at the time of inspection.
      • Corrective Action(s): Discard all dressings and yoghurt from the cooler. Repair or service the units so that it is capable of maintaining foods at 4 C or below. Do not store any foods in it until it maintains proper temperature.

      • Observation: No sanitizer was observed on site at the time of inspection.
      • Corrective Action(s): Ensure that either Chlorinbe Bleach sanitizer @100 ppm ( 1 oz bleach per gallon of water) or quats sanitizer is available in the kitchen to sanitize all utensils and food contact surfaces after washing. Enure to soak the utensils in 100 ppm chlorine bleach sanitizer for one minute and allow them to air dry ( Immediately)

      • Observation (CORRECTED DURING INSPECTION): A spray bottle of a " chemical" was found to be labelled. It was discarded during the inspection
      • Corrective Action(s): Ensure that all spray bottles of cleaners and sanitzing chemicals are accurately labelled for contents and dilutions.
      • E.g 1:10 "XYZ" cleaner or 100 ppm chlorine bleach sanitizer. ( immediately)

      • Observation: Final rinse temperature in the dishwasher reached 54 C at the plate surface.
      • Corrective Action(s): Repair or adjust the dishwasher so that it reaches at least 71 C at the plate suface during final sanitizing rinse.(immediately).

      • Observation: Evidence of cockroach infestation found in the ktichen cabinets under the coffee prep table, undernath the upright freezer, cooler and green bin.
      • Corrective Action(s): A licensed pest control company is monitoring and treating for cockroaches. Recommended further corrective and preventive actios as below:
      • 1. Cleam all cabinets thoroughly afte removing all dishes, utensils and equipment.
      • 2. Place cockroach glue traps in cabinets, under the sinks and under and behind deep freezer and upright freezer
      • 3. Seal or patch any holes or cracks or gaps in the wall and in between wall and equipment.
      • 4.Remove wooden kickboards or baseboards and re-install sealing all gaps with silicone
      • 5.All equipment, tables and their legs must be cleaned and sanitized leaving no food debris overnight.
      • 6.All open bags of flour in dry storage aeras must be stored in bins with tight fitting lids.
      • 7. Do not store organic bin in the kitchen for the time being. ( Immediately).

      • Observation: Diswasher final rinse temperature registered 55, 47 and 46 degrees C during three consecutive runs.
      • Corrective Action(s): Repair or service the dishwasher so that it reaches at least 71 C at the plate surface or 82 C/180 F at the temperature guage.
      • Until then all dishes must be sanitized manually. (Immediatel).

      • Observation: Mice droppings noticed behind the range, movable steam table , underneath the dishwaher and underenealth the dry storage shelves in the corner
      • Corrective Action(s): Clean the entire floor throughout the kitchen and storage areas to remove any mice droppings. Place mice traps along the walls behind equipment Ensure that any holes or gaps on the outside of the building are sealed or patched (Immediately).
