      • Corrective Action(s): Make a food contact surface sanitizer with bleach. 1/2 teaspoon of bleach with 1 litre of water to make 200 ppm chlorine food contact surface sanitizer.

      • Observation: Rodent dropping observed in various locations. Outside produce preparation station, corners of stores, in storage areas at the receiving dock.

      • Observation (CORRECTED DURING INSPECTION): In walk in cooler observed packaged Faith Farms cheddar cheese as turned mouldy. This is unsafe to consume and will lead to foodborne illness. Discard contaminated product.
      • Corrective Action(s): Ensure potentially hazardous foods are kept at 4C and below. Inspect inventory and discard of any damage product or contaminated product.

      • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Walk in cooler is at ambient temperature between 8.9C and 18C for more than 2 hours. This cooler for dairy products is required to hold temperature at 4C and below. Mouldy blocks of Faith Farms Cheddar Cheese observed at the time of inspecton. Measurements taken at top shelf 8.9C milk, bottom shelf 18C cheese, and shelving near to walk in door way 11C. EHO waited an hour on site with digital thermometers and there was no decrease in the temperature. All products stayed above 4C.
      • Corrective Action(s): Discard all potentially foods stored above 4C in this cooler for more than 2 hours. Do not use unit repair is complete. 4C and below is required for this unit and the food contents. Test temperature daily and then call EHO for follow up inspection to verify unit is working.
      • Move all new arriving inventory of perishable foods into vegetable walk in cooler at 4C and below. Vegetable cooler unit measured at 3.7C at the time of inspection.

      • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Knives and utensils used for cutting fruits and vegetables are not properly washed and sanitized. The 3 compartment sink is broken with no running water. The dedicated hand washing sink cannot be used to wash food and food equipment as it is contaminated.
      • Corrective Action(s): Immediately stop processing and cutting fruit and vegetables. Repair of 3 compartment sink required to ensure proper washing and sanitization of food contact surfaces.

      • Observation: 3 compartment sink is still not operational with no running water. Operator informs me they are still waiting for the plumber after 2 weeks.
      • Corrective Action(s): The 3 compartment sink is required for processing and cleaning any utensils used to process food. Effective immediately, do not process food such as cut fruit or vegetables without the 3 compartment sink. Contact EHO when 3 compartment sink is operational for follow up inspection.

      • Observation: 1. There is a leak at the 3 compartment sink and it is currently under repair. Station not in use at the time of inspection.
      • 2. The dairy/eggs cooler is icing and requires servicing and repair. Ensure contents are kept at 4C and below if unit is to be repaired.
      • Corrective Action(s): Repair both items. Ensure there is no contamination of food product and food contact surfaces.
      • For the cooler, food products like dairy and eggs must be kept at 4C and below during the repair. If the milk and dairy products are kept above 4C for more than 2 hours, it will be required to be discarded.
      • Correction for both items required in 2 weeks.

      • Observation: Fruit flies observed gathering around grease trap in dry storage area. This area will require cleaning and servicing to prevent growth of fruit flies.
      • Corrective Action(s): Ensure to clean this area frequently to prevent growth of fruit flies. Clean and sanitize this area frequently. Service grease trap as needed and use a pest control company to monitor and reduce the flie population. Correction required in one month.

      • Observation: General cleaning needed in the food preparation and fresh produce storage area. Old grease and food observed on light cooler fan covers and light covers. The flies like to accumulate here due to the old food and grease. Cleaning is required.
      • Corrective Action(s): Cleaning and sanitize these areas noted above. Use sanitizer on food contact surfaces to prevent attracting pests to old food debris. Correction required in 2 weeks.

      • Corrective Action(s): * Ensure all food equipment in proper working order and free of deterioration; provide proper cutting board and knives in proper working order for cutting vegetables, etc.; move cutting board station and knives to back area at 3-compartment sink area so there is access to washing/sanitizing system
