      • 3. No surface sanitizer available in food prep areas.
      • Corrective Action(s): 1. Follow proper dishwashing procedures (wash, rinse and sanitize).
      • 2. Ensure there is at least 200 ppm quats coming from dispenser. Staff will be using a 200 ppm chlorine solution instead of quats.
      • 3. Always keep surface sanitizer available when kitchen is in operation. Staff made a 200 ppm chlorine solution.

      • Always store ready-to-eat foods (vegetables and cooked foods) above raw animal products (meat, chicken, eggs).
