      • Observation: Minor cleaning required in food spills and grease build up areas:
      • 1. Prep sink where there is raw chicken being processed there are spills on the floor.
      • 2. Walk in cooler and freezer floor for old food spills like butter sauce.
      • 3. Walk in cooler fan has dust build up and requires cleaning.
      • Corrective Action(s): Ensure to wash and sanitize these areas after there are food spills or old food debris build up. Correction required in two days.

      • Observation: Observed build up of old food debris, dust and grease build up in working areas such as walk in cooler walls, fan, floor. Orange fish and chicken sauce spill observed inside walk in coolers walls and floor. Cleaning and sanitization required.
      • Corrective Action(s): Weekly deep cleaning is conducted by staff. Ensure to clean any new spills or areas where dust and grease may build up, such as fans of walk in coolers, food service walls and inside ice machines. Correction required in one week as part of schedule cleaning.

      • Observation (CORRECTED DURING INSPECTION): Damaged and cracking wooden scoops stored at front cooking service cooking station. The broken utensils may contaminate food with broken wood and cannot be used.
      • Corrective Action(s): Discard and replace any damaged food utensils or containers. Operator discarded damaged utensils at the time of inspection.

      • Observation: Main dishwasher is requires warm up runs to reach required sanitizer level of 50 ppm Chlorine and above. Ensure this unit can reach sanitizer level of 50 ppm Chlorine and above consistently during service. Repair and service required.
      • Corrective Action(s): Ensure dishwasher can reach at least 50 ppm Chlorine sanitizer at the plate consistently. Ideal range is 50 ppm to 100 ppm at the plate using a test strip (purple in color is 100 ppm). Ensure to test dishwasher daily and log reading. Last reading was noted on November 22, 2024. Correction required in two days.

      • Observation (CORRECTED DURING INSPECTION): Main kitchen did not have food grade sanitizer available during food service. Front of the house had 200 ppm chlorine solution with wiping cloths in use.
      • Corrective Action(s): During food service 100 to 200 ppm chlorine sanitizer is required for sanitization of food contact surfaces. Operator was able to make solution at the time of inspection. Education and information provided to operator on dilution of 4 mL bleach in 1L of water to create the 200 ppm chlorine soltuion. Operator needs to check solution with chemical test strip.

      • Observation: 1. Observed green plastic rice containers which were melted with rice stored in it. The plastic is in poor condition and cannot be used to store food. (CORRECTED AT THE TIME OF INSPECTION)
      • 2. Onion/potato mounted wall slicer had old food residue in the machine. Better cleaning is required to prevent contamination of food.
      • Corrective Action(s): 1. Discard any food containers which are melted or in poor condition. Use containers that are durable, food grade and can be easily cleaned.
      • 2. Make sure equipment is thoroughly cleaned and sanitized so there is no food residue build up in the machine.

      • Observation: General deep cleaning of hard to reach areas required. Old food debris observed on the floor and shelving of walk in freezer. Old, dirty cardboard in this unit needs to be discarded. Food debris observed in the corners of service coolers and cabinets. There are some minor spills in the backdoor hallway.
      • Corrective Action(s): Cleaning of hard to reach areas and every day spills required. The freezer may require a defrost to clean up the frozen food debris stuck on the floor and shelving. Old squished carrots and sauces observed. Correction required in 1 week.

      • Observation: * Ice cream freezer had some food being stored on top of it and ice cream scoop was found laying on top of freezer too; discussed with operator that food should not be stored in walk-in liquor cooler(ice cream freezer only) and ice cream scoop to be stored in sanitary manner (eg. in container) and scoop MUST be cleaned/sanitized via dishwasher after EACH use; also, sauce was found being stored in used milk jugs and this is unacceptable storage practise and can lead to cross contamination
      • Corrective Action(s): * Ensure ice cream scoop stored properly and in sanitary manner(eg. in container at coffee service station) and scoop MUST be washed and sanitized in dishwasher after EACH use; also, no food to be stored in liquor walk-in cooler as this cooler is for liquor only and ice cream freezer unit; used milk jugs are not to be used to store food as this is not suitable for reuse as a food storage container -- milk jugs are recycled after product used

      • Observation (CORRECTED DURING INSPECTION): * Some sauce was found to be at 13'C in walk-in cooler and was made the day before; operator reminded that perishable foods must be properly cooled quickly and maintained in 4'C/40'F or colder; discussed revising cooling process so that perishable foods cooled quickly and maintained at 4'C/40'F or colder (ie. not in danger zone 4'C-60'C)
      • Corrective Action(s): * Ensure all food cooled properly using a method that cools food quickly so that it is not left in the danger zone temperature (4'C-60'C); operator to adjust cooling method to reflect quicker cooling process

All fruits and vegatables to be washed first and then cut/prepped. Also, a dirty staff hat and napkin were found on food prep table and this is unsanitary-- operator removed immediately

Some cutting boards also require upgrade as these have deteriorated too and discoloured badly. Also, dry storage shelving also deteriorated and requires upgrade and this has been discussed at previous inspections. Also, wheels on walk-in cooler shelves have rusted/deteriorated and not cleanable and require upgrade to ensure easy/proper cleaning
