      • Observation (CORRECTED DURING INSPECTION): Observed that the low temperature dishwasher dispensed 0ppm at the plate surface during the final rinse cycle. The operator determined that the chlorine sanitizer bucket was empty
      • Corrective Action(s): The oeperator replaced the empty bucket and after multiple runs 50ppm chlorine was registered on the plate surface during the final rinse cycle. Please check the sanitizer on the plate surface frequenntly using a chlorine test strip to ensure that the utensils are sanitized and cleaned properly

      • Observation: 1. There are chemicals/cleaners and a drill machine stored next to and above food take out containers and the canola oil next to the deep fryers. Look for the coil cleaner spray and liquid degresser containers on top shelves above the take out containers.
      • 2. Some bags of flour are stored directly on the floor near the deep fryers.
      • Corrective Action(s): 1. Ensure cleaners and chemicals are stored away from food products and containers to prevent contamination of food. Move power tools in a designated area where it won't impact food service. Correction required today.
      • 2. Ensure all food products are stored at least 15 cm off the ground to prevent contamination of food. Correction required today.

      • Observation: General cleaning needed in hard to reach areas. Old food debris/grease and dust build up observed in the following areas:
      • 1. Walk in cooler and freezer fans and shelving.
      • 2. Grease build up observed in fume hood front edge above cooks. Cleaning service due in June 2024.
      • 3. Every day spills in the corners of walk in cooler and freezer. In walk in freezer some of the spilt food is frozen to the ground.
      • 4. Back shelving where the canola oil is stored near the deep fryers.
      • Corrective Action(s): Cleaning and sanitizing required in these areas to prevent debris build up. Include these areas into the deep cleaning schedule. Correction required in two weeks. Focus on areas where food is stored first, such as the shelving in walk in coolers.

      • Observation: 1. Under the fumehood some of the metal noodle strainers are in poor condition and held together by duct tape. The duct tape is not food grade material and may contaminate food or food sources.
      • 2. Near the rice hot holder there is a round, wood cutting board. It is in poor condition and will require frequent cleaning or replacement soon. There are minor grooves in this cutting board where food may become imbedded.
      • Corrective Action(s): 1. Replace or discard broken food utensils. The duct tape and adhesive can contaminate the food it is in contact with. Correction required today.
      • 2. Clean and sanitize the round cutting board frequently to prevent mould growth or food contamination. This utensil should be washed and sanitized every two hours. If you are unable to clean this piece of equipment, do not use and replace the cutting board. Correction required today.

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: 1. Cans of open food in coolers need to be transfered to food grade containers to prevent rust and metal contamination of food contents. Open can of hoisin sauce in walk in cooler and condensed milk in stand up cooler observed.
      • 2. Front of the house ice machine needs a thorough clean on the inside. Dust and old build up observed. Clean and sanitize as needed to prevent contamination of ice.
      • 3. Wood dollies are used to carry contaminers of food. Old grease and debris observed on dolleys. Cleaning and sanitizing required.
      • 4. Shrimp chips and deep fried won ton wrap on open buffet table require a food grade cover to prevent guests from contaminating the tray of food if they sneeze.
      • 5. Near the woks there is a metal pale used to scoop red vinegar and contaminates the hands of the staff and food. Use a clean scoop with a long enough ladle instead.
      • Corrective Action(s): All cleaning items above need to be corrected in one week. The cans of open food and open display food must be transported to food grade reusable containers with covers. Use scoops with clean handles to scoop food out of bulk bins can be upgraded today.

      • Observation (CORRECTED DURING INSPECTION): 1. Glass dishwasher was dispensing less than 50 ppm chlorine at the plate at the beginning of the shift. 50 ppm and above is required.
      • 2. Main kitchen dishwasher had an air bubble in the line and wash not dispensing chlorine sanitizer consistently. Less than 50 ppm chlorine was detected. Operator repaired this at the time of inspection.
      • 3. Automatic QUAT dispenser was plugged and less than 100 ppm QUAT sanitizer was detected. This was corrected by the operator at the time of inspection.
      • Corrective Action(s): 1. Repair and service glass washer and ensure at least 50 ppm of chlorine sanitizer is detected. In the the mean time, use the main dishwasher for sanitizing all glasswear. Correction required in 3 days.
      • For dishwashers and sanitizer units, ensure to test daily and record concentration of sanitizer to ensure the unit is working and at the right concentration. FoodSafe sanitizer and dishwasher log sheet issued to operator.
      • QUAT test strips turn dark green for 200 to 400 ppm required.
      • Chlorine test strips turn purple for 50 to 100 ppm Chlorine required for dishwashers.

      • Observation (CORRECTED DURING INSPECTION): Main dishwasher final rinse detected at less than 50 ppm chlorine at the plate. Dishes are washed at the end of the shift and was not in use at the time of the inspection.
      • Corrective Action(s): Dish washer must be able to main at least 50 ppm chlorine sanitizer at the plate during final rinse. Ideal range is 50 to 100 ppm chlorine at the plate. Repair this unit and test daily to ensure chlorine is detected. A log of chemical testing is recommended daily.

      • Observation: 1. A long hose bib was observed attached to mob sink without a back flow preventer. Do not use a hose bib without a backflow preventer as it may lead to cross contamination of the potable water source due to back siphoning. (CORRECTED AT THE TIME OF INSPECTION).
      • 2. Hand drying towels were placed next to food storage areas. Staff washing hands can contaminate food storage items.
      • 3. Bags of food stored directly on the floor. Store food on dedicated shelving. Food needs to be stored in dedicated containers with lids and scoops with clean handles.
      • 4. Kitchen light covers are missing about food preparation and storage areas. Replacement is needed to prevent broken glass from contaminating food and allow for easier cleaning.
      • Corrective Action(s): 1. Extended hose bib was removed by operator. Issue corrected.
      • 2. Store hand drying station in dedicated area near hand sink away from food storage. Correction required today.
      • 3. Food needs to be stored in dedicated containers with lids and scoops with clean handles. Do not double stack containers of food without adequate lids. Replace any scoops which are broken. Correction required in one week.

      • Observation (CORRECTED DURING INSPECTION): * Raw meat was found directly in prep sink being mixed by staff. This can lead to cross conatmination as food is in direct contact with sink and this is unsanitary practise. Meats/vegetables being prepped are to be done so in strainer/container which is placed in prep sink. Food should not be in contact directly with sinks as this is unsanitary and can lead to cross conatmination. Frozen spring rolls were found uncovered under shelves in walk-in freezer unit. This can lead to cross conatmination of food uncovered. These rolls were discarded. Ice machine was found to be mouldy inside unit where ice stored and this is concern for cross containation of ice used for customer drinks. Ice machine to be regularly/frequently cleaned to ensure it is in sanitary condition
      • Corrective Action(s): * Ensure meats/vegetables prepped in sinks are done so in proper food grade containers to reduce risk of cross contamination. Ensure ALL food covered in storage areas at ALL times to reduce risk of cross conatmination. Ensure ice machine properly cleaned/sanitized regularly to reduce cross contamination of ice going into customer drinks

      • Observation: * Some containers and trays were found being used that were deteriorated/cracked, etc. These are not acceptable containers/lids and must be discarded. Operator started to discard these containers, etc. Also, there are some missing light covers in kitchen/storage areas. These must be in place to cover bulbs in food areas. Also, dry storage shelving (painted) in kitchen and back areas has deteriorated and requires upgrade
      • Corrective Action(s): * Ensure ALL food containers/trays/lids in proper food grade condition and not cracked/broken, etc. Continue to review ALL food equipment and ensure ALL in proper working order. Install light covers where missing. Resurface dry storage shelving in kitchen and back storage areas with non-porous, permanent surfaces that are easy to clean/sanitize

      • Corrective Action(s): * Thoroughly clean ceiling tiles in kitchen to remove any build up. Also, operator replacing walk-in cooler shelving as the current shelving rusty and not very cleanable. Ensure new shelving food grade (eg. stainless steel) and provide wheels on shelving for easier moving during cleaning process and to allow more thorough cleaning to occur

These shelves are difficult to clean/maintain and food particles stick easily to these rusty shelves.
      • Corrective Action(s): * Upgrade wooden dry storage shelving with food grade shelving that is easy to clean/maintain (eg. stainless steel). Back dry storage shelving can be refinished (with hard surface material) as it is for paper products only. Replace walk-in cooler shelving with shelving that is food grade and easy to clean/maintain
