      • Observation (CORRECTED DURING INSPECTION): Container of custard observed at 50.2C in walk in cooler. The food product is in the danger zone due to improper cooling and may result in bacteria/pathogen growth.
      • Corrective Action(s): Ensure hot foods are cooled from 60C to 20C within two hours outside of the fridge using techniques such as ice wands or ice bath then place in the cooler to cool from 20C to 4C and below within 4 hours.

      • Observation: Minor fly activity observed in kitchen area. Ensure prevent and elminate pest activity in kitchen area when possible.
      • Corrective Action(s): Reduce and prevent fly activity in food processing areas. Discard any unprotected food which may come in direct contact with flies. Contact pest control company as needed. Correction required in one week.

      • Observation (CORRECTED DURING INSPECTION): Both sanitizer dispensers did not have quat solution at the time of inspection. Less than 50 ppm quat solution detected in buckets and 2 compartment sink. Sanitizer solution at dispenser were empty. Staff tested in the morning daily and the units were working.
      • Corrective Action(s): Ensure 200 to 400 ppm quat sanitizer is available during operation. Replace all sani buckets and refill with required concentration of sanitizer. Refill supply before they empty at dispensers. Test solution between shifts to ensure required concentration is met.

      • Observation (CORRECTED DURING INSPECTION): * Wiping rags found on counters in some food prep areas. This is unsanitary practise as rags must be kept in sanitary condition (eg. in sanitizer between use). Operator addressed this immediately once discussed
      • Corrective Action(s): * Ensure ALL wiping rags kept in sanitary manner (eg. sanitizer bucket between use) ready to use to sanitize food contact surfaces

      • Corrective Action(s): * Ensure ice machine cleaned/sanitized properly and on regular basis to maintain sanitary conditions. Also, ensure all areas of kitchen cleaned regularly and maintained in sanitary condition, including under/behind equipment

      • Corrective Action(s): * Ensure all areas properly cleaned and sanitized and maintained in sanitary condition at all times. Note: install metal flashing between fryer and grill to reduce grease splash over between equipment and make it easier for cleaning

      • Corrective Action(s): * Recaulk all areas where deterioration occurred and maintain. Also, walls in dry storage area and delivery hallway in kitchen have paint deterioration and will require upgrade to washable surfaces (eg. china board, etc) to allow for proper cleaning/maintenance
