      • Observation (CORRECTED DURING INSPECTION): * Ice machine at pop machine was found to be broken and ice scoop was being stored in container with ice used for customer for self service; Staff removed this ice container and scoop as this is not a sanitary means of dispensing ice for customer drinks; Also, container was found cracked and taped up-- which is not usable-- operator removed it immediately

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: * Dishwasher final rinse was 52'C-62'C at final rinse on several full cycles. It was determined that thermostat was broken and not sure how long it had been like that. Operator mentioned that monitoring had not been done for at least 3 weeks so no one had checked final rinse cycle temperature. Dishwasher internal thermometer on site was also broken. This is the second time dishwasher was found with final rinse temperature below requirement for sanitizing dish ware. Inspection conducted on October 8, 2015 revealed similar issue with final rinse temperature and operator had it repaired and said they would monitor it daily and document, however, this was not happening in the last month at least.
      • Corrective Action(s): * Operator contacted dishwasher service company for repair of thermostat, etc. Operator told to use single service dishware and cutlery for food service and three compartment sink system for pots/pans, etc. Operator verbally warned that closure of premises would occur next time dishwasher not working as this was considered neglect on their part since it had happened before and had been discussed in length as to the necessity of dishwasher working properly in order to operate. Note: After dishwasher repair rewash ALL dishware through out kitchen to ensure sanitized properly!

      • Observation: * Food in walk-ins to be stored properly and boxes located below prepped/wrapped items; food in dry storage area too requires reorganization and single use containers to be kept in orginal bag or container to protect them from contamination
      • Corrective Action(s): * Store all boxes below prepped food items and reorganize walk-ins and dry storage room so that food/food equipment protected from contamination

      • Observation: * Dishwasher final rinse was very low-- at 57'C at plate surface and this is unacceptable sanitizing rinse. Final rinse sanitizing to be maintained 74'C/165'F or hotter internally. Also, cooler at prep line with meat product was at 7'C-10'C which is too high and must be maintained at 4'C/40'F or colder. Staff had noted this in the last day and maintenance to fix immediately.
      • Corrective Action(s): * Ensure final sanitizing rinse of dish washer maintained at 74'C/165'F or hotter internally at plate. Ensure prep cooler (meat cooler) maintained at 4'C/40'F or colder at ALL times.
