      • Observation (CORRECTED DURING INSPECTION): Paper towel was missing from the front counter and inside the washroom. Paper towel was replaced during inspection.
      • Corrective Action(s): Ensure all hand wash stations are supplied with hot/cold running water, liquid hand soap, and single use paper towel at all times to allow for proper hand washing to occur.

      • Observation (CORRECTED DURING INSPECTION): 1. Cardboard being utilized to absorb oils from some fried food items such as goglay.
      • 2. Grocery store bags being used to store food items directly without proper lining.
      • Corrective Action(s): 1. Ensure materials used for food contact are of food grade materials. Cardboard is not an approved food grade material. Clean paper towel can be utilized for the purposes of excess oil absorbtion. Alternative method is to allow for excess oils to drip from wire rack slowly.
      • 2. Do not store food items directly in plastics that are not designated for food as these types of plastics may leach other chemicals into the food. Ensure foods being stored for food contact are of food grade material.

      • Observation: Large pots and woks observed to have significant amounts of old food debris on them.
      • Corrective Action(s): As previously discussed, all equipment must be thoroughly cleaned and sanitized after each use. Never leave equipment dirty overnight. Operator stated all dirty large pots/woks will be cleaned and sanitized today.

      • Observation (CORRECTED DURING INSPECTION): Quats sanitizer solution in spray bottle meausred 0 ppm.
      • Corrective Action(s): Operator empty bottle contents and refilled with fresh Quats solution. 200 ppm detected. Ensure to change the solution in your spray bottles every few days.

      • Observation: 1) Some food items in the walk-in cooler were not properly covered.
      • 2) Opened bags of dry ingredients were not stored in pest-proof bins with lids.
      • 3) Scoops for dry ingredients were stored directly in the dry ingredients, with handles in contact with the food.
      • 4) A bin of potatoes was stored in the large floor pot sink.
      • Corrective Action(s): 1) All food must be stored properly covered and protected from contamination.
      • 2) Once opened, dry ingredients must be stored in proper bins with secure lids.
      • 3) Handles must be stored such that handles are not in contact with food, or wash and sanitize scoops after each use.
      • 4) Your large floor sink is for washing and sanitizing large cookware only. Do not use this sink for food preparation.
      • Correct by: Today.

      • Observation: Many deep-fried snacks (dough-based, non-potentially hazardous) were stored in bins, containers, and large woks uncovered overnight. Some food items in the walk-in cooler were also stored uncovered.
      • Corrective Action(s): Never leave food out uncovered overnight. Store all food items in proper food storage bins with secure lids to protect from contamination and attraction of pests. Also ensure to cover all food items stored in the walk-in cooler to prevent potential contamination.
      • Correct by: Immediately.

      • Observation (CORRECTED DURING INSPECTION): Discarded food was left in the large pot/floor sink overnight. A dirty pot was also left in this sink overnight.
      • Corrective Action(s): Do not leave any dirty equipment or food scraps overnight. Operator cleaned and sanitized this area at time of inspection.

      • Observation (CORRECTED DURING INSPECTION): A fabric sheet was used to cover the dough mixer.
      • Corrective Action(s): Remove this sheet. All sufaces must be non-absorbent, durable, and easily cleanable. If you wish to cover your dough mixer, use a food-grade plastic cover. Operator removed fabric sheet at time of inspection.

      • Observation: 1) A sleeping/resting cot was found in the kitchen.
      • 2) No garbage can available onsite. Staff have been using garbage bags.
      • Corrective Action(s): 1) Food preparation and storage areas must not be used as living/sleeping quarters. Operator removed the cot at time of inspection.
      • 2) Purchase garbage cans/bins for your dishwashing area, food prepartaion area, and for each of your hand sinks.
      • Correct by: 1 day.
