      • Observation (CORRECTED DURING INSPECTION): Bag of frozen pepperoni was being defrosted at room temperature. Operator transferred product to a working cooler during inspection.
      • Corrective Action(s): Proper defrosting of frozen items must be done so correctly. Either in a working cooler overnight or If needed immediately, put under cold running water, or using defrost setting in a microwave.
