      • Observation: Repeat violation: Slight improvement to the cleaning required in the ice machine, however dark biofilm still present in certain places within.
      • Corrective Action(s): Turn off ice machine and remove all the ice to dissassemble the parts to thoroughly clean and sanitize inside following manufactuerers instructions.

      • Observation: Ice machine interior has accumulation of dark growth by the water distributor piping on top of the ice mold area and around all other mechanical parts.
      • Corrective Action(s): Turn off ice machine and remove all the ice inside to thoroughly clean and sanitize the inside, taking apart the parts that require cleaning following manufacturer's instructions. Discard first batch of ice that is produced before using after cleaning and sanitizing process has been performed. Schedule more frequent cleaning procedure for this piece of equipment.

      • Observation: 1. Plastic drink containers being reused and not being properly washed and sanitized. One of the containers was found sideways in the dishwasher.
      • 2. Overlapping of dishware in the dishwasher.
      • 3. No food contact sanitizer was noted in the sanitizing container by the front upon initial inspection. Operator was able to correct this during the inspection and container measured 100 ppm chlorine at the end.
      • Corrective Action(s): 1. Only use food grade containers that can be thoroughly cleaned and sanitized accordingly. Do not repurpose old drink containers that are not meant to be reused. Supply more reusable food grade containers, that can be easily cleanable, if they are needed for the intended purpose of dispensing quicker.
      • 2. Do not overlap dishware in the dishwashing unit. Only leave single layers of equipment such that it can be cleaned and sanitized properly.
      • 3. Ensure surfaces are sanitizing accordingly. Supply test strips for everyone to test to ensure surfaces can be sanitized as needed.

      • Observation (CORRECTED DURING INSPECTION): Soft serve ice cream mix was left out at room temperature to defrost from freezer.
      • Corrective Action(s): Ensure food items that require defrosting are done so accordingly by either running under cold running water or leaving in refrigeration unit overnight.

      • Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution for food-contact surfaces was too strong (above 200 ppm).
      • Corrective Action(s): Staff diluted at time of inspection. Ensure to mix only 1/2 tsp of bleach per Litre of water.

    • 301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: 1) Handheld immersion blender and other in-use coffee mixing/stirring utensils were stored in milky cold water directly under the liquid soap dispenser at the hand sink. Owner stated the in-use utensils and container of water are washed and sanitized at the end of each day.
      • 2) Ice machine/condenser panel had biofilm growth.
      • Corrective Action(s): 1) In-use utensils and handheld blender must be washed and sanitized more frequently (every 2 hours) and must not be stored under the soap dispenser or under any area that can cause potential contamination to the utensils/handheld blender. Placed utensils and container in dishwashing area for washing sanitizing.
      • 2) Discard all ice, disassemble your ice machine, and thoroughly clean and sanitized all parts. This must be done on a more frequent basis.

      • Observation (CORRECTED DURING INSPECTION): No food-contact surface sanitizer was readily available for use at time of inspection.
      • Corrective Action(s): Food-contact surface sanitizer must always be available for use during hours of operation. Wiping cloths/bar cloths must also be stored in sanitizer solution in between uses, and the solution used to store wiping cloths must be changed every 2-4 hours, dependent on how dirty/cloudy the solution becomes with use. Owner prepared a 100ppm bleach solution for use at time of inspection. Ensure this bleach solution is being used frequently throughout each day to sanitize all food-contact surfaces such as prep counters/tables, cutting boards, in-use knives, milk frothing wands, etc.
