      • Premises has an expired health permit decal and has failed to pay the yearly health permit fees, which are due in April every year. Hand delivered the outstanding health permit fees letter.

      • Observation:
      • Observed mice droppings on the floor behind upright cooler; on the floor and lower shelves in the noodle making room; and on the floor by the cook station prep sink. Mice and droppings carry diseases, and the mice could contaminate food with they touch food and/or food prep surfaces.
      • Observed drain/fruit flies within the premises. Spring is arriving and the flies hatch and multiply in and around drain pipes.
      • Corrective Action(s):
      • - Clean up mice droppings found behind and around equipment, and on lower shelves and cupboards. Clean and sanitize all surfaces that came into contact with mice droppings.
      • - Wash the floor at the base of walls and coving along walls to remove germs from droppings and the oils left behind from mice. Use hot soapy water, and then spray sanitizer on it. Do this every night.
      • - Daily, wash the exterior surfaces of all food containers and lids to remove accumulated food on them.
      • - Call a professional pest company to eliminate the mice.
      • - Have a professional pest company treat all drain pipes with a cleansing foam, to rid of built up food debris and pests on the interior sides of the drain pipes.

      • Observation (CORRECTED DURING INSPECTION):
      • Dairy products stored in the reach in, upright cooler was 8C. The temperature is too warm and the dairy products will spoil.
      • Corrective Action(s):
      • Immediately move all dairy products and perishable foods into a working cooler. During the inspection, staff relocated all perishable and dairy products to a cooler that was 4C.

      • Observation:
      • The exhaust canopy and filters have accumulated grease and dust on it. The grease will attract and harbor pests, and is a fire hazard. Professional service and cleaning is due to be done the month, as per service sticker.
      • Corrective Action(s):
      • Contact and schedule the exhaust canopy and filters to be professionally cleaned. Staff MUST clean the canopy and filters between professional cleanings to prevent accumulation of grease.

      • During the inspection, live adult and baby cockroaches observed in the premises, and dead cockroaches caught on glueboards. Cockroaches spread germs on their feet as they run on surfaces.
      • Corrective Action(s):
      • 1) Immediately close the premises.
      • 2) Purchase commercial grade degreasers, cleaners, and soap that is safe to be used in a commercial kitchen.
      • 3) A thorough cleaning from ceiling to floor shall be done using hot water, soap & degreasers, and scrub pads/brushes.
      • 4) Place all packages of food in hard plastic containers with tight fitting lids.
      • 5) Store all items off the floor on shelves/racks.
      • 6) Contact a professional pest company to inspect, treat (multiple times), and eliminate the cockroach infestation.

      • Large bottle of "30 Second" cleaner found under the 3-comp sink. Staff explained they use this product to clean the floor. This product is NOT made to clean floors of commercial kitchens and is unsafe to be used in a food processing setting. The chemicals could contaminate food and make patrons ill.
      • Corrective Action(s):
      • Immediately STOP using "30 Second" cleaner and remove it from the premises. Purchase and use food grade commercial cleaners in the premises only.

      • Observation:
      • Found signs of mice chewing through expanding foam around the sink's waste pipe in the noodle making room. Glueboards have been placed in the premises, by a professional pest company, to monitor for activity.
      • Corrective Action(s):
      • Fill gaps around pipes by tightly stuffing steel wool into the gap and then using expanding foam to seal it. Ensure the professional pest company continues to check/monitor for pests at least once a month.

      • Immediately pay the yearly permit fees of $150 or closure of the premises will occur until full payment is received. During the inspection, $150 cash was received to pay for the outstanding permit fees.

      • 1) Accumulation of dust on the ceiling and upper walls, this can fall into food and contaminate it.
      • 2) Accumulation of food and grease on the floor beneath equipment, sinks, shelves, racks and tables. This food will attract and breed pests.
      • 3) Accumulation of grease and food found on cooking equipment surfaces, especially between pieces of cooking equipment. This food and grease will attract and breed pests.
      • 4) Accumulation of food debris on the outside of food storage containers. This will attract pests.
      • 5) The exhaust canopy and filters have some accumulation of grease, and they are due for a professional cleaning as per the service sticker. Failure to have the canopy professionally cleaned and serviced on a regular basis is a fire hazard and it will attract pests with the accumulation of grease.
      • Corrective Action(s):
      • 1) Wash the ceiling and upper walls to remove the dust. Ensure this is being done every month to prevent the accumulation of dust.
      • 2) Wash and scrub the floors under the mentioned areas with commercial grade degreasers and cleaners to remove the food and grease. This shall be done every day, have staff look under the mentioned areas to ensure all food and grease have been cleaned up.
      • 3) Wash and scrub all surfaces of cooking equipment with commercial grade degreasers and cleaners to remove the food and grease. This shall be done every day.
      • 4) Wash and scrub the outside of food storage containers to remove the food and grease. This shall be done on a weekly basis.
      • 5) Immediatey call a professional company to schedule the exhaust canopy and filters to be professionally cleaned and serviced this month.

      • Observation: 1) The exhaust canopy and filters have accumulated grease, which could fall into food or on staff. The next professional cleaning was due on Jan. 11/23. Manager explained that the filters are not cleaned between professional cleanings as it's too difficult and unsafe.
      • 2) There is dust accumulated on the upper walls and ceiling tiles around air diffusers. The dust could fall into food or on cookware and make people sick. These surfaces are cleaned monthly.
      • 3) There are food crumbs and stains on u/c shelves; on the legs of equipment, tables, shelves, and sinks; and on the exterior surfaces of food containers and lids. Pests will be attracted and harbor on these surfaces.
      • Corrective Action(s): 1) Schedule the exhaust canopy and filter to be cleaned by a professional company. Increase the frequency the filters are cleaned to once a month. If staff are unable to clean the filters themselves, contract a company to clean them monthly.

      • 2) Wash the upper walls and ceiling tiles to remove the dust. Increase the frequency these surfaces are cleaned to 2x a month, to prevent the accumulation of dust.

      • Observation (CORRECTED DURING INSPECTION): Large amounts of cooled, poached eggs and sliced pork were being stored on the counter top. The temperature was 18C. Bacteria is able to multiply on these foods if they are not kept cold. This was mentioned in the previous inspection.
      • Corrective Action(s): Immediately store only enough product, on the counter top, which can be used in 2 hours. The rest of the food shall be stored in cooler and taken out to replenish it. As well, during a slow time, foods shall be placed in the cooler until a customer arrives. During the inspection, staff placed the foods in the cooler.
      • If this violation is noted in any future inspection, more enforcement action will be taken such as discarding of food and/or issuing of tickets and fines.

      • Observation (CORRECTED DURING INSPECTION): The designated hand washing sink is missing liquid soap, paper towel, and has storage racks in front it it not making it accessible. Staff are unable and not encouraged to wash their hands properly or frequently.
      • Corrective Action(s): Immediately place liquid soap dispenser and paper towel at the hand washing sink, and move the storage racks to another area so staff can access the hand sink at all times. During the inspection, staff corrected it.

      • Observation (CORRECTED DURING INSPECTION):
      • During peak times, staff are storing large amounts of perishable foods (cooked meat, bean sprouts, cooked eggs, etc.) at room temperature. The food is not being used within 2 hours, which means bacteria has grown on it, which will make customers ill.
      • Corrective Action(s):
      • Immediately place all food items in a working cooler. Only take out enough food to use in 2 hours, any food left over MUST be thrown out. Retrain staff on this practice. At time of the inspection, the foods were placed in a working cooler.

      • Observation (CORRECTED DURING INSPECTION):
      • The hand sink in the kitchen (by the soup pots) had equipment in the sink basin. the hand sink was blocked from use, and staff are not able or encouraged to wash their hands.

      • Immediately remove the items from the sink basin so staff can wash their hands. Ensure the sink basin is accessible for use at all times. During the inspection, staff removed the items from the sink.

      • Immediately hire a professional pest control company to treat the premises for the flies. Stop spraying vinegar on surfaces to rid of the flies, this doesn't work. Keep up the sanitation level and ensure these is no food or water left out.
