- Observation:
- Some accumulated grease found on the floor under and around the legs of equipment (deep fryers, grill, etc.), and along the base of walls found behind equipment and shelving racks (dry storage rack). This will attract pests.

- Wash the mentioned areas every night with hot soapy/degreaser water to remove the grease.

- Observation (CORRECTED DURING INSPECTION):
- 1) Open container of panko crumbs stored in chemical storage area, and colander of pickled ginger stored in the dishwashing area. The food can be contaminated with chemicals or dirty dish water.
- 2) Open bags of spices were found to be stored in an uncovered food container. This will attract and provide food for pests.
- Corrective Action(s):
- 1) Immediately put a lid on the panko crumbs and store away from the chemical storage area.
- 2) Immediately move the colander of pickled ginger to the food preparation sinks.
- 3) Transfre and store all open bags of spices into a container with a tight fitting lid.
- During the inspection, the violations were corrected.

- Observation:
- 1) Exhaust canopy & filters have accumulated grease. This will attract pests.
- 2) Accumulation of some food debris and grease found on floor and walls beneath and behind prep tables, equipment, and racks. Especially along the base of walls and between equipment. This will attract pests.
- 3) The floor, handles of equipment, and exterior surfaces of equipment feels greasy. This will attract pests.
- Corrective Action(s):
- 1) Clean the exhaust canopy & filters. Ensure this is being done every week. Purchase and use a commercial grade degreaser/soap to clean, as they are stronger and will make it easier & faster to clean.
- 2) Deep cleaning of hard to reach areas need to be done, to help eliminate pests. Purchase and use a commercial grade degreaser/soap to clean the floors.
- 3) Clean the mentioned areas with a commercial grade, foodsafe cleaner/degreaser.

- Observation:
- 1) The foam, anti-fatigue mats were falling apart and are not cleanable. Food debris will accumulate and attract pests.
- 2) The cardboard, saran wrap, foil, and other single-use materials lining cupboard, shelves, equipment and tables are changed every 3-4 days. These materials are not cleanable and will attract pests.
- Corrective Action(s):
- 1) Throw away the foam, anti-fatigue mats and replace them with a mat made of a durable, sealed and cleanable material.

- 2) Throw away the cardboard, saran wrap, foil, and other single-use materials at the end of EVERY night. If you do not do this, STOP covering the surfaces with these materials.

- Observation:
- 1) Big red, plastic colander was broken and wire was used to keep it together. Broken plastic and metal could fall into food.
- 2) Sliding doors, on the sushi cooler case, were broken and so not fully close. Cold air is constantly leaking out making it harder for the cooler to keep food cold.
- Corrective Action(s):
- 1) Immediately throw away the red, plastic colander. Inspect all cookware and utensil daily for damage, and throw away if damaged.
- During the inspection, the red colander was discarded.
- 2) Purchase and install new sliding doors on the sushi cooler case, so the doors can fully close and keep the cold air in.

- Observation:
- Observed mice droppings on lower cupboards and on the floor along the base of walls around the dishwasher and dry storage areas. Mice and their droppings carry diseases, which can contaminate food when the mice touch it.
- Corrective Action(s):
- - Continue to clean up all droppings everyday and wash (hot, soapy water) & sanitize (bleach & water) all surfaces that came into contact with the droppings.
- - Move all equipment away from walls to determine if there are any holes/openings/gaps that are allowing mice in.
- - Block all holes/openings/gaps with steel wool, metal meash (1/4" of smaller), or metal plates.
- - Contract a professional pest company, if rodents are still present in May 2025, to rid of the rodents.
- - Place all packages of food (spices, dry noodles, candy, etc.) in a food grade container and cover with a tight lid.

- Observation:
- 1) The exhaust canopy and filters have accumulated grease and dust on it. The grease and dust could fall into food and contaminate it.
- 2) Minor accmulation of grease and food stains on surfaces; legs of equipment, sinks & prep tables; lower walls; and floor under equipment & shelves. This will attract and harbor pests. Staff are using bleach to "clean" and domestic cleaners (Mr. Clean Floor Cleaner & Palmolive dish soap). Bleach does NOT have any chemicals to remove food & grease, it only kills germs (bacteria & viruses). Domestic cleaners are NOT strong enough to remove grease and food in a restaurant.
- Corrective Action(s):
- 1) Clean the exhaust canopy and filters with hot soapy water. Increase the frequency these areas are being cleaned to once a month.

- 2) Immediately purchase and use "commercial" level/grade cleaners in the kitchen. Purchase floor cleaner, wall and general surface cleaner, and equipment (grill, deep fryer, etc.) cleaner. Contact your chemical supplier and purchase such cleaning chemicals from them.
