- - Remove the exhaust filters and clean them, to remove the accumulated grease. This shall be done once a week.

Move all items off the floor of the walk-in-cooler so propoer cleaning of floors under shelving units is done.

- 1) The exhaust canopy and filters have accumulated grease and dust on them. They are required to be cleaned on a regular basis by staff. As well, they are required to be professionally cleaned and serviced by a company. The service sticker states it should of been done in July 2025.
- 2) There is accumulated dust on the ceiling tiles in the kitchen. The dust could fall into food and contaminate it.

- 1) Immediately schedule the cleaning and service of the exhaust canopy and filters to be done this month.

- Premises does not hold a valid health permit decal, as owner has failed to pay the yearly health permit fees of $250. Hand delivered outstanding fees letter.

- Immediately pay the outstanding permit fees of $250. Failure to do so will result in the closure of the premises until they are paid in full. During the inspection, a cheque for $250 was provided for the fees.

- 1) The low temperature dishwasher had a [Cl2] of 0ppm. No chlorine was exiting the tube into the dishwasher, so dishes are not being sanitized. During the inspection, the manager called a company who is sending out a technician today.
- 2) The prep sink in the kitchen has a leaking faucet, and a piece of cloth has been tied around the leak to lessen the water flow. The constantly dripping water will attract mice and harbor flies.

- 1) Immediately stop using the dishwasher and call a company to repair the machine so the rinse cycle has [Cl2] between 50-100ppm. Only offer food in take-out containers. Call our office to schedule a follow-up inspection when the dishwasher is fixed.

- 4) Back door, opening into the bowling alley, is propped open. This may allow mice to enter your premises from the bowling alley area.
- 5) There is a space at the bottom of doors (electrical room and door to back of kitchen) that will allow mice into these area.
- 6) Unused, extra or broken items being stored on the premises. Mice will live in these areas, or use materials to make a nest.
- 7) Opening found at base of seat in the last booth near the back door. Mice may enter the premises through this opening.

- 1) Purchase "Expanding Foam" from Home Depot and spray in the openings to plug them up.
- 2) Purchase clear, large storage bins with tight fitting lids. Store all items in the dry storage room, in a storage bin to protect them from mice.
- 3) Purchase wire metal mesh (1/4" or smaller) or steel sheets from Home Depot. Seal and screw the metal mesh or sheets to the wall so mice can't chew through it.
- 4) Keep the back door, leading into the bowling alley, closed at all times.
- 5) Purchase "Door Guards or Door Sweeps" from Home Depot. Screws on the base of the doors to block mice from entering.
- 6) Throw away all unused, extra, or broken items from the premises. This will eliminate areas mice will hide and live in.
- 7) Tightly pack, the opening at the base of the booth seat, with steel wool, and then spray with Expanding Foam.

- 1) Found open tin can of Oyster sauce being stored at room temperature and the sauce is remaining in the tin can. The is unsafe, as bacteria can grow in the unsealed sauce and metal/rust can contaminate food as it's stored in the tin can.
- 2) Packages of food and/or food contact items (containers, etc) are being gnawed by rodents. The foods and food contact items could be contaminated by bacteria from the rodents hands and mouth.

- 1) Immediately transfer the Oyster sauce into a food grade container (stainless steel, hard plastic or glass) and cover with a lid, and store in the fridge at all times. During the inspection, staff transferred the sauce into a food grade container.

- Observation: Found mice dropping in the dry storage room on shelves and on the floor under shelves and platforms. Mice droppings contain germs which will contaminate food.

- 1) Scrubbing and cleaning of the dry storage room surfaces (floors, shelves, walls, outside of food containers, etc.) requires to be completed to remove mice droppings and food stains. Take all items off the shelves and move all platforms so the shelves and floors can be properly cleaned.
- 2) Buy food containers with tight fitting lids, and place ALL foods (open and unopened) in containers to prevent mice contaminating the food.
- 3) Contract a professional pest company to eliminate the mice problem using non-chemical means (traps, glueboards, etc.). A thorough inspection of the dry storage room and all other areas (interior and exterior) of the building shall be done to determine entry points and elimination strategies.

- 2) Cardboard lining shelves is soaked with oil, grease and food debris. Cardboard is not food grade, sealed, durable or cleanable. This will attract pests (flies and mice) and is a fire hazard.

- 1) Replace the whole door and gasket with a new one, if you are unable to just replace the gaskets. OR, replace the whole u/c cooler unit with one that has intact door gaskets that can be cleaned, and can keep food below 4C/40F at all times.

- Observation (CORRECTED DURING INSPECTION):
- Bean sprouts were found to be sitting in clean water at 17C. Bacteria and viruses can contaminate and grow in the bean sprouts at this temperature.
- Corrective Action(s):
- Immediately throw away the bean sprouts, staff completed this. Bean sprouts must be stored in an ice-water bath or in the cooler at 4C at all times.

- Immediately stop using the dishwasher and call a repair company to fix the dishwasher. Increase and maintain the [Cl2] between 50-100ppm. Immediately stop dine-in service and only offer take-out, as there is inadequate warewashing facilities. Manually warewash cookware using the 2-compartment menthod until the dishwasher is fixed. Contact our office when the dishwasher is fixed, to schedule a follow-up inspection.

- Premises has not paid the yearly permit fees, and therefore does not have a valid operating permit. Hand delivered the outstanding permit fees letter to the owner.

- Immediately pay the yearly permit fees, in the amount of $250. Failure to do so, will result in the closure of the facility until they are. At time of the inspection, the owner provided a cheque (#1591) for the full amount outstanding.

Cleaning and scrubbing with hot water and soap is needed of: racks, shelves, outside of food container; legs of tables & equipment; undersides of sinks and tables; all surfaces and sides of equipment; walls beneath and behind tables and equipment.

- 2) Immediately remove all perishable food items (meats, spring rolls) from the u/c cooler and place in a working cooler. Call a repair company to fix the cooler so that it can maintain 4C of colder at all times.
