- Observed drain flies in the premises. Staff observed flies coming out of the sink drains in the morning, when they turn on the water. Flies transmit germs to food when they land on food.
- Corrective Action(s):
- Have a professional pest company treat all drains (sink & floor) with specific cleaning, expanding foam soap. This will remove all food debris and pests from the sides of drains.

- The prep sink in the kitchen has a leaking drain pipe. Water is pooling under the sink and creating an environment pests can breed in. This was observed in the previous inspection and required to be fixed.

- Observed live cockroaches on glueboards in the dishwashing area. Cockroaches carry diseases on their feet. During the inspection, the owner contacted Rentokil and scheduled a treatment next week (Oct. 22/25)
- Corrective Action(s):
- Eliminate all cockroaches from the premises by doing the following:
- - Call a professional pest company to rid of the cockroaches. At least 2 treatments will be needed to eliminate the problem.
- - Follow all recommendations made by the professional pest company.
- - Deep clean the premises before AND after each treatment to maximize the effective of the cockroach bait, and to remove dead bodies.
- - Remove all sources of pooling water, such as leaking pipes or equipment (dishwasher, ice machine, etc.).

- 1) The ceiling tiles and air diffusers have accumulated dust on them. The dust could fall into food and contaminate it.
- 2) The exhaust canopy and filters have accumulated dust and grease on them. Dust could fall into food and the grease poses a fire hazard and will attract pests. As per the service sticker, the canopy and filters should of been cleaned in October 2023.

- 1) Wash the ceiling tiles to remove the dust, and/or replace the ceiling tiles with new ones if you are unable to remove the dust. Increase the frequency the ceiling tiles are cleaned on a regular basis.

- Observation: High temperature dishwasher observed not functioning. Operator was aware of issue and attempted contacting maintenance companies. A two compatment sink is present. Given the large volume of dishes and ongoing food prep throughout the day, adequate sanitation cannot be achieved.

- Observation (CORRECTED DURING INSPECTION): Mouse droppings were observed around containers/bags of flour, sugar and other dry goods. One of the packages was broken. Pests can transmit disease and measure must be taken to eliminate them.
