- There is cardboard on the lower shelf of the wood prep table (adjacent to the sinks) near the deli area.All surfaces in a food facility must be smooth, impervious to water and be easily cleanable. Cardboard is not an appropriate surface.There is also visible mold and water damage below the plastic cutting surface.
