    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • 0 ppm Quat sanitizer was detected in the pail containing sanitizing solution in the bakery area. A new sanitizing solution was prepared during the inspection, and was measured to be 200 ppm Quat. Ensure that staff are using Quat test strips to measure sanitizing solution concentration, and that fresh sanitizing solution is prepared as needed throughout the day.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • There are no test strips for measuring the Quat sanitizing solution concentration. Obtain Quat test strips and ensure staff are using then to monitor the concentration of sanitizing solution used on food contact surfaces. Ensure that 200 ppm Quat is available for use at all times.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Some of the bristles on the pastry brushes were noted to be loose. Pastry brush was discarded during the inspection, and new pastry brushes will be ordered.Ensure that pastry brushes are monitored carefully and discarded when the bristles start to come loose.
